Shrimp Ceviche on Salad

“Ceviche” is a relatively new word to me.  Wikipedia says ceviche is a seafood dish marinaded in citrus juices – and I’m with ya so far.

But Google Chrome and it’s squiggly red line under the word Ceviche is suggesting I use the word “Crevice”, which is not especially helpful because until just a few moments ago, I wasn’t even sure how to pronounce “ceviche”.  Now I’m going to go to a fancy party some day and say “May I please have the Shrimp Crevice?” and people are going choke on their caviar and/or snort Cristal out their nose.  Thanks for nothing, Google Chrome.

Leftover Lentil Burger Leftovers

A great way beat the leftover blues is to create something new and different with your uneaten foodstuffs from a previous meal.

Thanks to a big scoop of rolled oats, lentil tacos from Sunday were turned into lentil burgers last night.

Lentil Tacos Turned Lentil Burgers

With oats stirred in to the last of the lentil taco filling and then given a few minutes to sit, they’ll very generously soak up the sauce and thicken up. It’s then easy to form the mixture into patties with your hands.

Cooked in a lightly oiled pan for about 15 – 18 minutes, flipped a couple of times.

Crazy as a Cucumber

Sarah’s comment the other day about having five pounds of cucumbers made me realize that I too have plenty of cucumbers right now.

So what the heck can you do with a lot of cucumbers? Am I crazy or do people make cucumber soup? Cold cucumber soup? Haven’t I heard of that before? Doesn’t that sound right?

Yeah, that sounds right.

If you are a gazpacho lover, then cucumber soup will be right up your alley. Even if you aren’t a gazpacho fan (cause Zak’s not and he loved this) it could still be worth a try.

Trust not small ones with Greek yogurt on their face.

After offering Maxine a sample of my Cucumber Melon Water:

“Did you like it?”

Cucumber Melon Water

“I tasted something slimy in there.”

Nice try kid.  You barely took half a sip.

Next time you are cutting up a cantaloupe or watermelon, throw a couple of chunks in the jar with your water and cucumber slices to turn Cucumber Water into Cucumber Melon Water.

It’s good. You can trust me. My face is clean.
