Pancake Breakfast

I find it SO easy to get out of bed when the sun is already up and the air is warm. I woke up at 5:45 and hopped on my bike sometime after 6 to breeze around town for 13+ miles in about 50 minutes.

Today was a Sarah inspired breakfast. Oatmeal pancakes! I haven’t had these in ages and was in the mood for some pancake love.

I used:

1/2 c rolled oats
1/4 c whole wheat flour
1/2 tsp baking powder
1/2 c organic 1% milk
1/2 smashed banana
1 Tbsp almond butter

Stirred up and into the olive oil sprayed pan they went. Flip once they start to bubble, just like regular pancakes.

These were so sweet and moist from the banana and almond butter I didn’t even need syrup. They tasted just like banana bread! Although I’ll admit I smeared a little AB on the last few bites when I was out of banana slices.

The girls smelled pancakes when they came downstairs and were excited about pancakes for breakfast too.

Now as much as I’d love to make them oatmeal pancakes, they won’t eat more than a bite of them. So I used a more traditional pancake recipe for with white flour, sugar, eggs and milk, but I compromise and sub some white flour with whole wheat flour, use less sugar than called for and sprinkle some rolled oats into the batter that they don’t even notice.

They picked their own cookie cutters for the shape of their pancakes. I find that they are more invested in breakfast (or any meal) when they have some control over food prep.

With some real maple syrup and fun shapes, what kid can resist healthier pancakes?

Monday Mess

Today’s workout can be filed under: ohmygodwhatthehellhappenedtothishouse?!

You know it’s been a busy weekend when the house is a disaster on Monday morning.

I knew a rest day was in order when I wasn’t pumped about my run yesterday. Even though I was glad I ran after I got going, my reluctance was also my sign that it was time for a day off.

I swapped today’s work out time for an hour of getting caught up house work and then another hour catching up on emails and cleaning up my desk. Around 8 I felt hungry enough for breakfast.

Today’s cold oatmeal delight was chocolate overnight oats.

1/2+ cup of rolled oats soaked over night in 1/2 c unsweetened chocolate almond milk, 1/4 c Stonyfield Farm LF vanilla yogurt, 1 tsp of unsweetened cocoa powder. Topped this morning with about a tablespoon of ground flax, almond butter, a sprinkle of yesterdays homemade granola and sliced bananas!

With organic coffee and a few glugs of organic 1% milk.

I had gotten the family room partially picked up but it was all undone upon the rising of the two primary mess makers in the house!

Be Happy! It’s Friday!

One might think that as a stay at home mom Friday would seem like any other day, weekend or not, and in some ways it is like any other day… but I can’t completely shake the Friday mentality that’s ingrained in us from early on. Of course I enjoy having Zak home for two days to help share the child rearing duties! And I enjoy his company too I suppose. 😉

I woke up hungry but didn’t have anything I was in the mood to eat before I worked out. At least nothing that I felt wouldn’t weigh me down. I also couldn’t figure out what I was in the mood for in regards to a work out either. Talk about indecision this morning.

Eventually I decided to hit the gym today because our membership expires at the end of June and I probably won’t renew it until September or October. I feel like I spend ALL winter in the gym and much prefer to exercise outdoors. When it’s nice out the gym is usually the last place I want to be.

Grey skies and the desire for something different, I hopped on my bike and rode the mile to the gym, spent 20 minutes on the elliptical, 10 minutes on the treadmill doing some incline walking and then some (non-inclined!) sprints and then more incline walking. I also did some weights with the machines before I left; seated rows, triceps, lats and abs. I took the long way home and ended up with a total of about 15 minutes on my bike. Regular cardio round table today.

Having not eaten before I left from the gym, my stomach was practically eating itself by the time I walked in the door. Thank goodness a my chocolate breakfast cookie was ready and waiting!

Breakfast Paradise

No work out for me this morning, not an official one anyway. Today is a rest day but I still couldn’t pass up the opportunity to take a short little leisurely ride on my bike to the corner grocery store. It’s such a perfectly sunny, cool morning! The banana hammock is empty and I need my bananas for breakfast.

I enjoyed coconut in my breakfast cookie so much yesterday I decided to add it in to today’s breakfast too.

Last night I put together 1/2 c+ rolled oats, 1/4 c Stonyfield Farm LF vanilla yogurt, 1/2 c unsweetened vanilla hemp milk and a tablespoon of coconut. I also took a couple chunks of organic mango from the freezer and put them in the fridge to thaw over night.

Home with my loot, I topped my overnight oats with a tablespoon of ground flax, diced up mango, 1/2 a banana and some crushed pecans. The mango, coconut and pecans made me feel like I was eating breakfast on a tropical island! Plus coffee with a generous splash of organic 1% milk.

You’ll Drool Too

I mean come on, would you scold Michelangelo about paint brushes and paint cans everywhere as he painted the ceiling of the Sistine Chapel? Would you tell Da Vinci to “clean as he goes” while he worked on the Mona Lisa?

I think not.

I had this for a little protein and Vitamin C(hocolate), to help me power through clean up.

I was only going to soak half the bag but Mr. I’m Full of Suggestions wondered aloud why I wouldn’t soak the whole bag, so in they went.

After soaking for 8ish hours, I cooked them for over an hour and then made a bunch of hummus. Enough hummus to feed a small army, as matter of fact.

First, plain old garlic.

Almond Cinnamon Hummus

With two kinds of hummus made and still a bunch of chickpeas left to use, I wanted to do something CRAZY. Crazy I tell ya!

I remembered a post from Kath Eats a few weeks ago where she made hummus with cinnamon, and slowly the boulders in my head started to shift and I took inventory of what I had in stock.

I used (approximately)

2 cups of cooked chick peas
2 Tablespoons of almond butter
2 tsp of cinnamon
2 Tbsp canola oil
2 Tbsp maple syrup
Splash of lemon juice

A.Mazing. Incredible. So good I can’t believe I ever squirreled up my face at the idea of cinnamon in hummus. Did you hear that crazy lady hollering from the roof tops today?

“Cinnamon! In hummus! Pure Genius!”

Yeah, that was me.

I promptly shoved the red pepper hummus off the sample plate and cut up an apple. Dessert for dinner!

Two breakfasts and a head sized salad for lunch, I was not very hungry for dinner. Not to mention I had almond butter at every single meal today! Healthy fats? Check. A hummus sampling smorgasbord was the perfect dinner.

A Salad as Big as My Head

See? I’m not kidding!

I ate the whole dang thing!

It was exactly the same as yesterday’s apple, tofu, cashew, feta, miso salad but with mushrooms today too.

Maxine helped with today’s afternoon snack: Magenta Monsters. Magenta would be Maxine’s new favorite color.

I don’t know how magenta these really were but we rolled with it!

And when no one was looking I tossed in a few spinach leaves and they didn’t even notice! 😉 I’m getting them acclimated to the taste of spinach *insert evil cackle here*

And I turned my Magenta Monster GREEN GREEN GREEN as soon as theirs were poured!

For dinner, inspiration struck as I heated up left over chili for the man of the house and he put together a veggie dog in a piece of wheat bread and said he was in the mood for a chili dog…. oooo good thinking!

I opted for fries in place of bread.  Into the toaster oven!

What a Crock

For lunch today I made one of my favorite salads.

Red leaf lettuce, spinach, 3/4 of a large Gala apple, chopped (I ate the other 1/4 while I prepped) some tomato and basil feta cheese, cubes of extra firm tofu and a few cashews.

Everything into a large bowl, then I added 2 Tbsp of this amazing Miso dressing.

When I say tossed salad, I mean tossed salad.

While making lunch for myself and the girls, I decided to get dinner started at the same time knowing we had plans to be out all afternoon. We love Vegetarian Chili and this recipe can be made on the stove or in the crock pot. I decided to go the crock pot route this afternoon so that dinner would be hot and ready as soon as we walked in the door AND the kitchen would already be cleaned up from lunch.

Vegetarian Chili

2 15 oz cans of Pinto Beans, rinsed and drained
1 can of Light Red Kidney Beans, rinsed and drained
1 can of Dark Red Kidney Beans, rinsed and drained
8 oz of frozen corn
1 can of diced tomatoes
8 oz of crushed tomatoes or tomato sauce
2 – 3 cups of water and/or vegetable broth
1 clove of garlic, minced
Cumin, Paprika, Chili Powder, Cayenne Pepper and salt, to taste

Place all ingredients in pot and stir! How easy is that?

As noted above, you can use water or vegetable broth. I chose to use vegetable broth today because I had some open in the fridge that I wanted to use up before it went bad.

I used A LOT of cumin and chili powder. I don’t measure, I just add spices in an amount that I think is about right (erring on the side of caution) and then adding more if needed after I test it. If had to guess I’d say I used at least 2 – 3 Tbsp each of cumin and chili powder, 1 Tbsp of paprika and a dash of salt and cayenne pepper (leave out completely if you don’t like it spicy, add more if you like to spice it up!)

This is one meal that the whole family will actually eat! Because of that I don’t put too much cayenne in, and Zak and I can spice ours up separately if we like.

I put the crock pot on high for about an hour as we got ready to leave. Before we left I turned it to low knowing we’d be gone about 3 to 4 hours.

This can easily be cooked on the stove too. Put all ingredients in a large pot and cook on high until it boils. Reduce heat to low and cover, cook for about a half hour. This makes a lot of chili – probably 8 servings, but it’s an easy dish for Zak to bring to work for lunch and is good for a leftover dinner too.

Lettuce Go On a Date

You know how you get a new car, and then suddenly it seems like everyone everywhere is driving the same car, when in the past you’d barely even noticed said car?

Well that seems to be the case for making snacks with dates too.

It all started innocently enough with Elizabeth’s post on date bars. They looked amazing and on my next trip to the grocery store I bought a pound of medjool dates.

Then came Mary’s post two days later on making her own Larabars, and the wheels in my head continued to turn.

I’m a big fan of Larabars but cannot seem to find the much coveted Peanut Butter Cookie Larabars in any of the stores around here! I love being able to chuck a Larabar into my bag when I’m running out the door. Easily portable and still real food with lots of staying power. I’ve been looking for this PB Cookie flavor to no avail.

So if the mountain won’t come to Muhammad…

I bring you: Almond Crusted Coconut Peanut Butter Date Bars

OK, the name still need a little work. But on with the show.

10 pitted medjool dates, chopped
1/4 c creamy natural peanut butter
3 Tbsp shredded coconut
1/4 c sliced almonds, pulverized

Place chopped dates into into the food processor to form a paste.

Transfer date paste to a bowl and with a fork, stir in peanut butter and shredded coconut.

A little sample proved that this tasted great, and I loved the slight crunch the coconut gave the bar, but was still too wet and sticky for my liking.

Enter: the “Almond Crusted” part of the recipe.

Place sliced almonds in food processor to turn them into almond dust.

Shape the date mixture into squares (or whatever shape your little heart desires) and then flip them around in the almond dust.

Done!

Store in an air tight container and leave in the fridge. These are vegan, raw, and gluten free!

The big question though? Zak loved them, so did I! Ava ate about half of one before she decided she wasn’t fond of it. Maxine took the teeniest, tiniest nibble and declared, per usual, that she didn’t like it.

In other news, it was raining over the berry patch this afternoon.

No one was snoring, but we were delighted to see one of Ava’s favorite books in the berry patch!

We have three strawberry plants, and they’ll probably produce about 12 strawberries between the lot of them. I figure they’ll last me one breakfast.

After the “rain” let up, we planted our vegetable plants in the garden that we bought on Friday. And speaking of Friday, I decided to take my bike out for a quick spin to test drive the tire I had repaired earlier in the day (which had been punctured by an industrial sized staple, still stuck in the tire).

A quick 4 mile loop around the neighborhood and I was home, rear tire still inflated. Phew.

For dinner was sundried tomato hummus wraps, I topped mine with red leaf lettuce, sliced tomato, shredded cukes and a bit of shredded cheese. Couldn’t pass up the opportunity to make hummus when I had the food processor out for the date bars! 😉

Feeling like I still needed a little more protein + something sweet, I had a 1/2 container of leftover Fage with some PB granola and chocolate chips!

Now I’m checking out the forecast and plotting my workout for the AM. Chance of showers at 6am? 10%. Chance of run at 6:30? 95%. I suppose I have to leave some room for error.

But How?

My motivation to get healthy began in 2008 when I started to notice how achy and old my body was feeling at the ripe old age of 29.  Getting healthy wasn’t just about losing weight and feeling better about my appearance, (although I won’t deny that vanity certainly played a role) I realized I wanted to feel good again, to feel like myself again.  To feel young again!

You: Staying Young by Dr. Michael Roizen and Dr. Mehmet Oz was what kicked off my “It is Time to Get Healthy” initiative.

Learning to Live a Healthy Life

So what’s the secret to Staying Young? The key points that I took away from this book were: Eat right. Stay Active. Get enough sleep.

Yes, of course. We’ve heard it all before.

That’s all well and good, but HOW? How do you make these changes that lead to a happier, healthier life? How do you adapt these concepts into your own life and make them actually stick?

My answer? Find role models. I needed to see how people really did it. I needed different sources of motivation, whether from books, magazines, television, friends and family in my real life or from the internet. Seeing HOW other people implemented healthy life style choices into their lives to teach me how to do it.

You watch. You try. You learn. You experiment. You fail. You watch. You try again. You learn. You persist.

When I think about how we learn to do anything – be it cooking or cleaning or communicating – from what we eat, to how we exercise, from playing to parenting, what we wear, what’s trendy, what’s not – we learn it all by watching other people. I see how my daughters watch what I do and how they learn from me. I see them mimic my facial expressions, my gestures, my words, my actions, both the good and the not so good.

And we continue to learn this way throughout the course of our lives.

Watch and Learn

We continue to learn by observing others. As adults, we are able to discern what’s working for someone and consider how it might work for us. We learn how to surround ourselves with people who have characteristics we want to adopt. We are also able to observe what’s not working for someone and learn how to take steps to avoid negative outcomes. We’re always watching and learning, sometimes intentionally and sometimes unintentionally. We take away what we like, and make the choice to incorporate these new ideas into our own lives. Or not.

When I was losing weight, I was able to find all the motivation I needed from books, magazines and the people in my real life. As a child I watched parents stay active and exercise regularly.  I’m sure that plays a large role in why I enjoy exercise and fitness today.  I want this for my children too.  I run and stay active because it allows  me to feel good and makes it easier to maintain my healthy weight.  But I also stay active because I know my children are watching and observing me – before they even know what they are seeing.

Watching the numbers go down on the scale and feeling more comfortable in my clothes was incredibly motivating, but once I started to maintain my new weight, I had moments where I felt like I was starting to flounder. I needed new inspiration to stick with it and keep from sliding back into old habits. Healthy living blogs were my saving grace. Reading about the lives of complete strangers who were willing to share their stories and how they incorporated healthy habits into their own lives showed me how I could do it too and make it a normal part of my life as well.

Get Healthy, Stay Healthy

I’m eager to share the ideas that have worked for me, because maybe some of the things I’ve learned and do can work for you. I’m always so excited to share the new things I’m trying and reading, and now I enjoy writing about them for other people to find, the same way I found what I needed when I needed it.

I hope you’ll enjoy reading about the things I enjoy learning about and the way I incorporate these things into my life.  At the same time, I want to show how I incorporate any new ideas, healthy eating and exercise into my every day life – along side my roles as a mother, wife, daughter and friend.

I’ve come a long way, but I’m still learning too. I’ve come to realize that if I don’t stay on top of what’s new and don’t continue to educate myself, I lose my way.  I too am still watching, still making changes in my life, weeding through what I think will work for me and what won’t.

My hope is that the things I find inspiring might inspire you as well, and that these things might help you make positive change in your life as well as we all work toward a similar goal – a healthy, fulfilling and balanced life.
