Zak is going strong with his 40 Day Paleo Challenge (although exceptions were made this weekend for his birthday!) and I’ve been keeping busy stocking the fridge with Paleo friendly meals and snacks.

I’m calling this a “Fall Favorite” because 1.) well, it’s fall – and  2.) I’ve made this for dinner once a week for the past three weeks in a row.  It’s on the dinner agenda this week again too.  It think it’s safe to call this turkey marinara and spaghetti squash a new favorite.

I bought a spaghetti squash last week simply because it was there on the shelf in the produce department. I had no spaghetti squash plans. I had no spaghetti squash dreams.

I did know that I wanted to do something different with this planless, dreamless spaghetti squash. I’ve made spaghetti squash pie and spaghetti squash with red pepper sauce, this time I was in the mood for something new.

When I realized I was going to make a curried spaghetti squash? I declared myself a genius.

Red pepper sauce as an alternative to tomato sauce, like the recipe card says. My mom made this recipe a lot when I was a kid, and I remember thinking she was nutso for making sauce with RED PEPPERS of all the nasty and disgusting things on this earth.

(Kids are so dumb.)

At least she didn’t make me eat a “no thank you helping” of this stuff. And now I know why. Because it’s so dang good she didn’t want to share a drop with some kid who wasn’t going to appreciate it!

Dinner Time Secrets

I don’t think I’ve made it a secret that I’m a Dinner Planning drop out.  Tonight was one of those nights where I found myself slapping together whatever ingredients I had on hand in an attempt to turn those ingredients into a meal.

I do have other secrets though.  If you listen carefully, I’ll whisper some to you while I slap together this post.

So what do we have here?  A small spaghetti squash, sweet potatoes three and four, the de facto garlic and onion, plus a bunch of canned stuff.

Carrot Finger

Now, I won’t show you what’s under that bandage, but let’s just say this carrot sorta reminds me of something that I can’t quite put my finger on.

You know, if I had some raw hamburger to stuff into that crack there I bet then I could finger figure it out.

So how on earth a little finger infection and minor surgery can throw life into such upheaval for a couple of days is beyond me. But then I look at that carrot again and think about all the nerve endings in my finger suddenly I’m reminded why.

I’d like to give special thanks tonight to my neighbors, who put up their Christmas tree the day after Halloween. This has been cause for being repeatedly peppered with the “When are we going to put our tree up?” screech question every time we come home in the dark.

This is the earliest I’ve EVER put up a Christmas tree. I know a lot of people put them up the day after Thanksgiving, I’ve just never been one of those people. I’m afraid I’ll turn into the Incredible Hulk and start ripping down lights and tinsel around December 23rd if I put decorations up too early.
