This morning I had a meeting at Ava’s homeschooled school. That’s right, my homeschooled kid will be going to school. Just once a week for 3 hours with a bunch of other homeschoolers, but still – we call it school.

Aunt Ellen stayed with the girls while I went to the meeting. I snacked on an apple on the drive there.

And ate a Larabar mid meeting.

Home and more than ready to eat, I went with fast. Just your run of the mill everything-but-the-kitchen-sink gigantic tossed salad.

Continuing with today’s fruit for breakfast theme, I polished off a bunch of a cantaloupe as I got us packed up and ready to the head to the museum today.

This was also about the same time that Ava learned the internet was down.

A little beach trip with some friends was in order for today, so we threw lunch in a bag this morning and off we went.

While practically all the Newman’s Own Organics loot we were sent to try has been fabulous, I have to say these weren’t that great. Not BAD, but just – weird. Maxine spit hers out and a seagull ate it.  The seagull had no complaints.

Simple Sandwich

A delectable vegetable sandwich on scrumptious toasted Ezekiel seven grain bread with a smattering of homemade two-day-old guacamole, freshly sliced tomatoes and store bought, hand washed fresh from the fridge romaine lettuce.

A mumbo jumbo plate of steamed cauliflower, shredded carrots and zucchini steamed in only the finest tap water this side of the Mississippi, topped with the Parmesaniest cheese this side of Wegmans.

We broke for lunch and I made a little hummus sandwich. And took a giant picture of it.

Toasted Ezekiel bread with mustard, garlic hummus, red leaf and tomato.

A Few Hints

We had a great day at the children’s museum today, despite having all the children of the city there to join us. It rained all day and apparently we weren’t the only ones who had the brilliant idea to find something fun to do indoors today.

Curried Lentil Burgers

My day was quite productive! Mainly due to this:

My poor honey was still feeling pretty puny this morning, she got up only to come downstairs and sleep all morning.

Maxine enjoyed her freedom and ruled the roost!

After my productive morning, I got down to the business of dinner. At lunch time.

I told Zak I was going to make lentil burgers for dinner tonight. I make homemade veggie burgers all the time but have yet to try them with lentils. He said curry might be good in them, so I went with it!

Pancake Breakfast

I find it SO easy to get out of bed when the sun is already up and the air is warm. I woke up at 5:45 and hopped on my bike sometime after 6 to breeze around town for 13+ miles in about 50 minutes.

Today was a Sarah inspired breakfast. Oatmeal pancakes! I haven’t had these in ages and was in the mood for some pancake love.

I used:

1/2 c rolled oats
1/4 c whole wheat flour
1/2 tsp baking powder
1/2 c organic 1% milk
1/2 smashed banana
1 Tbsp almond butter

I mean come on, would you scold Michelangelo about paint brushes and paint cans everywhere as he painted the ceiling of the Sistine Chapel? Would you tell Da Vinci to “clean as he goes” while he worked on the Mona Lisa?

I think not.

I had this for a little protein and Vitamin C(hocolate), to help me power through clean up.
