If you eat kale, do you remember a time when you didn’t eat kale?

I sure do.  Kale was totally a “No, thank you” food as a former only-iceburg-lettuce-eating lady.  But then I tried kale chips sometime in 2008 or 2009, and my love for kale began.  I’m fairly sure that kale chips are the gateway drug to dark leafy greens.  If kale seems dark and scary to you – try it in chip form.  It’s hard to say “No Thanks” when it’s warm and crispy and delicious after being baked in a little oil and salt.

Hearty Chicken Tomato Vegetable Soup

It’s been a sleepy Sunday here.  I just finished eating this bowl of soup for lunch.  Soup that was so delicious it deserves a blog post – for you, and for me, because I don’t want to forget what I did so I can make this again.

I roasted two bone-in chicken breasts yesterday afternoon and once I removed the meat from the bones, I put the bones into the crock pot with a handful of other miscellaneous chicken parts I’ve been hoarding in my freezer (thanks to you genius people who gave me this tip!) for homemade bone broth.

A few weeks ago I went out to dinner with some girlfriends and did my favorite thing: ordered something that I never make at home myself.

This time?  A pork chop.

Yes, pork chops – not terribly exciting, but the one and only time I made pork chops was as a newly married 20-something who knew very little about cooking, especially when it came to cooking meat.  Those pork chops I made in our little apartment more than a decade ago more closely resembled an old shoe than a juicy, great tasting piece of well cooked pork.

Zak is going strong with his 40 Day Paleo Challenge (although exceptions were made this weekend for his birthday!) and I’ve been keeping busy stocking the fridge with Paleo friendly meals and snacks.

I’m calling this a “Fall Favorite” because 1.) well, it’s fall – and  2.) I’ve made this for dinner once a week for the past three weeks in a row.  It’s on the dinner agenda this week again too.  It think it’s safe to call this turkey marinara and spaghetti squash a new favorite.

I got a recipe from a friend earlier this week that called for sausage and kale, among other ingredients.  The only two items I had on hand were the Italian sausage and kale, but those two items sounded like the answer to my What’s For Dinner Tonight prayers.

I decided to improvise and soon heard myself shouting “Hallelujah!” as a delicious sausage and vegetable medley of kale, tomato, carrot and pepper was born unto thee:

I’ve had a number of conversations with some friends and family about breakfast recently, and so I decided to put together a collection of morning food photos from the past few months.  Once upon a time I ate overnight oats for breakfast every day!  As I’ve mentioned more than once lately, I’m going the grain free route most of the time and don’t even miss my beloved oats, cold cereal or cinnamon raisin Ezekiel toast with almond butter and banana.

In my post about Zak’s juice fast, a couple of you asked about some of his favorite juice recipes.  Let’s just say that there has been a lot of experimenting on his part lately.  He often makes what he calls “Kitchen Sink Juice”.  I’m sure this title needs no explanation (but here I go anyway.)   He basically piles together whatever he finds in the fridge and then proceeds to shove it into the juicer.  From where I stand there does appear to be some rhyme and reason to what he makes for himself – often adding greens, carrots and beets for the nutrients, plus some apple, pear, lemon, lime and/or ginger to help with the flavor.  But then there was that time that he juiced an onion.  And that day when he juiced 4 cloves of garlic.  We’ve put garlic in juice before – but not 4 cloves.  And not until we had that vampire problem.

As I mentioned in my last post, Zak is on a 40 day juice fast.  To quickly recap, Zak watched Fat, Sick and Nearly Dead, a documentary film by Joe Cross about his 60 day juice fast that lead to an 82 lb weight loss, freeing himself of his autoimmune disease and getting off all his prescription medications.

I watched this documentary a few weeks ago, but Zak watched it when it was first released in 2011.  He was very inspired by the film and has talked about doing a juice fast “some day” ever since.  Thanks to a Biggest Loser style weight loss competition at work, he decided the time is finally here.

This is quinoa and sauteed kale in a sauce made from red peppers, onions and tahini.  I initially made this to stuff into portobello mushroom caps, but this stuff was so stuffin’ good that we’re going to focus more on the stuffing instead of what was stuffed.

Stuff this into mushrooms if you like, but you could just as easily choose to eat this as-is and call it lunch.  Or use it as a side at dinner. Or as dinner itself.  Or even for breakfast.  Watch me eat this for breakfast tomorrow.  WATCH ME!

(ok, maybe don’t watch me.  that’s a little creepy.)

Fresh juice!  It’s time to haul it all out of the fridge and run the numbers.

Fresh Green Juice Ingredients

Today I made green lemonade from:

1 bunch of dinosaur kale
Beet greens from three beets
1/3 of a head of celery (3 – 4 stalks)
2 gala apples
2 lemons
1/2 seedless cucumber
a hunk of ginger about the length of my pointer finger

Kale juice with a splash of red from the beet greens? So pretty.

Until you mix it all together, that is. Then it more closely resembles black lemonade.

How Much Fresh Juice
