When I wasn’t eating fruit this morning, was drinking green lemonade.

And after juice, I did exactly what I said I wasn’t going to do. I googled.

If your pupa has been very dark for over 48 hours, it is probably dead.

I’m almost positive our little buddy is gone. He started turning brown well over 48 hours ago. They are supposed to be green and plump until they are about to emerge but ours is brown and looking kind of shrivled.

We broke for lunch and I made a little hummus sandwich. And took a giant picture of it.

Toasted Ezekiel bread with mustard, garlic hummus, red leaf and tomato.

And pretended I was a little dinosaur eating giant steamed trees.

Sometime between lunch and dinner came cookie time. We busted out the Newman’s Own Organics Champion Chip Cookies.

Eight Years Later

Completely OUT of vegetables on Sunday I played Supermarket Sweep in the produce section last night and spent about an hour prepping vegetables today. I see… I see… a GIANT salad in my future… yes, yes, a salad for sure.

First my gorgeous watermelon:

That should be enough to last a few days, wouldn’t you say? And that wasn’t even all of it, Ava and I each had a serving that I didn’t put away!

Memorial Day 2001

Memorial Day, 8 years ago, Zak and I were newly married and on our way to Aruba!

Memorial Day 2009? We cleaned the garage.  8 years.  Sounds about right.

On tonight’s dinner menu: black bean burgers with a side of kale chips.  McDonald’s ain’t got nothing on this version of burger and fries.

I first heard about Kale Chips on Fat Free Vegan, but she didn’t have much luck with them, so it wasn’t until I read Kath’s post about them that I finally tried them. If you’ve yet to discover kale chips, it’s about time you did!

Thanks to Running Towards a Dream I was inspired to make a new flavor of hummus I’ve never tried before.

With that I bring you: Spinach Artichoke Heart Hummus.

This. Rocked.

I threw a large handful of spinach in to the steamer and let it steam for about 5 minutes until it was soft and wilty.

While it was steaming, I put the following into the food processor:

1 can of garbanzo beans, drained but not rinsed

5 artichoke hearts from a can

1 Tbsp (+/-) Joyva Tahini

Inspired by Kath’s Fiesta Broccoli Dip

2 c steamed, cooled broccoli
1/2 of an avocado
1 Tbsp (+/-) lemon juice
1/4 c cilantro (fresh or dried)
salt to taste
1 c corn, cooked, cooled
1 medium tomato, diced
1 medium onion, diced

Put broccoli, avocado, lemon juice, cilanto and salt into food processor. Blend until forms a creamy paste. Transfer mixture from food processor into another bowl, stir in corn, onion and tomato.

Great served with crackers, bread, tortilla chips or pita chips.
