I don’t know about you, but we learned how to ride the bus.

Did you know that Google Maps makes it EXTREMELY easy to figure out how to get from Point A to Point B on the bus?

I don’t think I’ve made it a secret that I’m a Dinner Planning drop out.  Tonight was one of those nights where I found myself slapping together whatever ingredients I had on hand in an attempt to turn those ingredients into a meal.

I do have other secrets though.  If you listen carefully, I’ll whisper some to you while I slap together this post.

So what do we have here?  A small spaghetti squash, sweet potatoes three and four, the de facto garlic and onion, plus a bunch of canned stuff.

One Potato Two Potato Three Potato Four

I’ve been staring at these sweet potatoes on my shelf for over a week now and finally decided today was the day to do something with them.

Well, two of them anyway.

Only Used Two

Sweet Potato Pancakes

2 Sweet Potatoes, shredded (you can peel them or simply scrub them and slice off any questionable spots)
1/2 c flour
2 eggs, beaten
1/4 c apple sauce (or a couple tablespoons of some other sweetener like agave or even sugar if desired)
2 – 3 Tbsp canola oil
dash of salt
dash of cinnamon
1 tsp baking powder
(optional chili powder if you like them spicy!)

Innocent Until Proven Guilty

This juice sure looks innocent, doesn’t it? Today was the first day I made juice for both Zak and myself with the Breville. Zak likes a lot of ginger and the new juicer handles ginger like a real champ. These two facts are a dangerous combination, as I was a little too eager and generous with the ginger this morning.

I’m fairly certain that this juice tunneled new pathways in my sinuses. I think I shook my head and bugged out my eyes after every sip. But I still drank it all! No worries. I think I’m fully protected from any sort of flu that might try to invade my immune system from now until 2011, Swine or otherwise.

I Lost My Jicama

And no, Jicama is not latin for my “mind”. Or maybe it is.

After our crazy morning we packed up and headed to the park to meet up with our friends for some fun with colors.

We talked about the color wheel, primary colors, secondary colors, contrasting colors and complementary colors. I like it.

We got rained on and our lesson was cut short, so we walked to our friends house and to play and snack.

My late morning oatmeal held me over for a long time. Around lunch time I ate one of the three apples I packed.
