This was supposed to be post #9 of 44 into this series of Healthy Eating on a Budget.  Cauliflower was on today’s agenda.  Unfortuantely, it wasn’t until after I made, photographed, devoured and sat down to write this post about Red Pepper and Cauliflower Bisque that I realized cauliflower is NOT on the list of affordable healthy food items under a $1 that I’ve been working from.

Can you hear me groaning from here?  Planning fail.  Well guess what!  I’m going make a case for cauliflower anyway, because that list of 44 healthy foods is not the boss of me.  More importantly though, this soup was too delicious to not share.

Caveman Fajitas

October 10th, 2013 | Posted by Alison Spath in Dinner Time - (5 Comments)

Even though I’m not participating in a 40 Day Paleo Challenge, I’m still cooking for someone who is – so for the time being, I’m making dinner like any good cave woman would.

Namely, low-carb/grain free chicken fajitas.  Just call me Wilma Flintstone.

Paleo Chicken Fajitas

Lettuce as a our tortilla was the only thing I did differently to make these chicken fajitas Paleo friendly.  You could obviously use a regular flour tortilla here in place of lettuce if that’s what floats your boat.  (And if you can float a boat with flour tortillas, you must tell me and we will alert the National Academy of Physics!  Or whoever is in charge of gravity, momentum, centrifugal force, etc, etc.)

Attack of the Snacks

March 14th, 2012 | Posted by Alison Spath in Short or Sweet - (14 Comments)

Once upon a time I ate one snack a day, usually between lunch and dinner. But now at nearly 7 months pregnant, I’ve stopped counting how many snacks I eat everyday. I need more fingers if I want to keep track.

Today I’m in the mood to hand out some awards to a few of my most favorite snacks in recent weeks. Snickity snacks that are awesome if you eat 1 or 11 snacks a day. Snacks that please the palate whether you’re gestating or not. I think this paragraph needs the word “snack” in it one more time, don’t you? Snack. OK, that’s two more times. Snack.

Four New Things To Try Sometime Soon

February 9th, 2012 | Posted by Alison Spath in Lunch - (5 Comments)

It’s been a busy week playing catch up after being out of town for a few days, so I’m here today to share a couple of random things worth trying if you’re looking for something new to do with yourself, your mouth or even your hair.

First!

Try Brushing Your Teeth in the Dark.

Thanks to a couple of flashing firefly toothbrushes, one of our new favorite new activities is scrubbing the pearly whites with the lights off.

Bathroom Dance Party

It’s a dance party in your bathroom! You’re totally invited to join us and pump up the volume while you pump out some toothpaste.

Three little peppers, all in a row.

Three Red Bell Peppers

Mom’s Red Pepper Sauce? Say it ain’t so!

Mom's Red Pepper Sauce Recipe

Red pepper sauce as an alternative to tomato sauce, like the recipe card says. My mom made this recipe a lot when I was a kid, and I remember thinking she was nutso for making sauce with RED PEPPERS of all the nasty and disgusting things on this earth.

(Kids are so dumb.)

At least she didn’t make me eat a “no thank you helping” of this stuff. And now I know why. Because it’s so dang good she didn’t want to share a drop with some kid who wasn’t going to appreciate it!

Stuff It, Quinoa

September 7th, 2011 | Posted by Alison Spath in Lunch - (1 Comments)

When I bought my bag of flax seed over the weekend, I snagged a bag of another now-infamous pseudo-grain/seed –>

Arrowhead Mills Quinoa Black Bean and Quinoa Stuffed Peppers

oh, Quinoa – it’s been a while!

And with quinoa in my cupboard, suddenly I had quinoa stuffed peppers on the brain. That meant digging through the blog archives to remind myself how I made Quinoa Stuffed Red Peppers in the past.

Ummm, that was like my second post. Ever.

Nostalgia rules. Stuffed peppers make me drool.
