Eat, Drink and Pay Late Fees

I shed my yoga pants this evening in honor of the ribbon cutting ceremony being held at the library. (There’s no better reason to shed your pants if you ask me.)

Library After All

A new wing was unveiled at the library today! And it was named after me! Just a little “thank you” from the library to me for all the overdue fines I’ve paid.

I gave a speech after they listed all the new books, equipment and monuments they’ve purchased with my overdue fines. You’re welcome Library – it’s been my pleasure.

After having pumpkin soup at a restaurant last Friday, I’ve had pumpkin soup on the brain. Water on the knee – pumpkin soup on the brain, it’s a real medical condition I swear. Needless to say, I’ve been on the look out for the perfect pumpkin soup recipe to try my hand at it at home.

Bernie shared a pumpkin soup recipe last week, and I stumbled upon a few others that looked great and helped get the wheels in my head turning.

Today we did nothing but stay home most of the day and play catch up. I wore my stay at home mom uniform all day: t-shirt, hoodie, sweat pants, no bra. I swapped out my sweat pants for jeans when we ran Ava to dance class and got a few groceries late this afternoon – still no bra, thank you hoodie. You’ll be glad to know I’m back in my uniform once again.

I’ve been in search of the perfect homemade veggie burger recipe for a while now. The black bean burgers I make are quick, easy and tasty, but they aren’t perfect. They are pretty mushy and need a little more structure.

A few weeks ago I sent in a picture I took of the girls at zoo this summer to our newspaper for consideration for the “Our Towns” section.

Low and behold it showed up today’s paper! I positively squealed when my dad called this morning to tell me. When I showed Ava she said “I’m in the newspaper! Finally!

It’s been 5 1/2 long years since her birth announcement, I guess she’s been waiting.

So I’ve been inundated with bread lately. I’ve also been staring at an acorn and winter squash on my counter for a couple weeks now.

Ava loves to ask what she’ll be able to do when she’s X years old. What can she do when she’s 7? How old does she have to be to drive a car? How old will Maxine be when she’s 9? How old does Mommy think she is eating all those prunes?

Today in the car on the way to the grocery store (where else would we be going?) she asked what she can do when she’s 13.

Me: *thoughtful for a moment* Ummm, you can babysit.

Ava: BABY SIT?!? Naw, that’s boring.

The Marathons are Over

A whirlwind day yesterday with so much going on, thank you all for all the birthday wishes for my baby girl!

After Maxine opened her gifts from us in the morning I got started on her cake. I used a chocolate cake recipe I’ve used in the past.

Dark Chocolate Cake
2 c boiling water
1 c unsweetened cocoa powder
2 3/4 c flour
2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 c butter, softened
2 1/4 c white sugar
4 eggs
1/2 tsp vanilla extract

After lunch today we were off to run some errands and explored a brave new frontier. OK really it was just a playground we’d never been to before. Brave new frontier sounds much more interesting though if you ask me.

After my post this morning the girls were ready for breakfast and said they wanted waffles. Ummm, alright. Alright would be code for I just cleaned up the kitchen but sure, why not.

Waffle Day

They love to stir while I read the recipe and measure out ingredients for them to add in. Add in is code for play tug of war with a cup of milk.

We used the waffle recipe straight out of the waffle box. The drops of syrup on that recipe is my proof.

Make Your Own Cereal

I got up with Zak this morning when the alarm went off at 5. He headed out to go swimming and I headed down to the kitchen. Feeling hungry already, today would have been a perfect morning for some green lemonade, except for one problem. I’m out a romaine. I’ve got spinach but spinach doesn’t have a lot of water and I’ve come to find that it takes A LOT of spinach to get a decent amount of liquid from it.

What’s that saying? If life hands you lemons, make lemonade? Well then, if life hands you spinach, make a green smoothie.

A Lesson in Vegetarian Lasagna

This is actually one of the first vegetarian dishes I ever made.

No, wait.

This is actually one of the first meals I ever made – period. In fact, I tear up now when I think about this vegetarian lasagna recipe.

(Not really. But I do like to pretend that I’m dramatic sometimes.)
