Oven Roasted Coconut Lime Cod

This dinner was so unexpectedly delicious, I’m not sure how to best relay just how much we loved this coconut lime crusted cod.  Here goes nothing.

Baked Coconut Lime Cod

Zak and I both had the same thought while eating this: this doesn’t taste like fish, it tastes like a cookie!  A warm, coconutty, limey fish cookie!

(If seafood and coconut are your thing, you’ll love this fish cookie, I promise.)

This recipe came about because I was in the mood to do something a little more interesting than my usual approach to baking fish – i.e., sprinkling with salt and pepper.  I like cod, but it’s kind of a boring fish.  And I like my fish like I like my relationships: interesting, but not complicated.

There’s been a lot of talk about juicing around here lately.  I think it’s time we veer wildly off the juice beaten path to talk about sardines.  Sardines!  Aren’t you excited?  Well get excited!  Sardines make a fanastic salad!  So fantastic that I’m going to keep increasing the amount of exclamation marks I use when I talk about them throughout this entire post!!  See!!!  Isn’t this getting exciting?!!!!

No?  I suppose that was getting a little out of hand.  But I am still excited about the sardine salad I made for lunch yesterday, it was surprisingly good!

The Fountain of Juice

Yesterday was my 34th birthday.  Thirty four.  What a perfectly ordinary age.

Although I think I’m officially in my “mid-30’s” now.  How about “early in my mid-30’s”?  That’s a little easier to swallow.

Getting older isn’t so bad, it’s the looking older part that doesn’t thrill me.  There are more gray hairs sprouting from the top of my head than I can/should pull out now.  I’ve been noticing more fine lines around my eyes lately too.  And there is definitely less distance between the floor and my butt these days.  Hmmm, what other embarrassing things about myself should I admit here?  I think I’ll stop now.
