I get a kick out of eating Brussels sprouts.  In my mind, they are famous for being the most disgusting vegetable someone might ever threaten a child (or picky adult) with having to eat.

When I discovered that Brussels sprouts are not disgusting or gross, there was only one logical conclusion that I could make about myself:

I like Brussels sprouts, therefore, I am a bad ass.

Sweet Potato Hash

Today we’re making sweet potato hash.

And by we I mean *I*, and by today I mean *yesterday*.

Whoever, whenever – sweet potatoes are cheap, healthy and delicious.  One of the best things about this series of affordable healthy foods is that it’s encouraging me to find new ways to prepare a bunch of my favorite foods so I don’t bore us all to tears with the same old, same old.

Well cry not my potato loving friends!  Sweet potato hash is new to me and was a welcome change from my default roasted sweet potatoes that I always make.  (If sweet potato hash is not new to you – then here, have a tissue.  And I guess I did still roast them, but still – THIS IS DIFFERENT!)

Broccoli shows up at #37 in the list of 44 Healthy Foods Under a $1 and this is at least true for conventional broccoli – organic tends to be more expensive.

Broccoli is at low risk for pest invasion so it’s supposedly sprayed less than other vegetables, but the Environmental Working Group puts broccoli right in the middle list of their list of Fruits and Vegetables with Pesticide Residue (ordered from worst to best) – what’s a semi-paranoid produce penny pincher to do?

I eat eggs just about every day.  They are easy to prepare, crazy good for you and there are approximately one gagillion different ways to use them. I completely agree that eggs are one of the healthiest foods on this planet and in my opinion, represent the pinnacle of affordable nutrition.

I try to buy pastured eggs from my local co-op or farmers at the markets because free range chickens produce eggs that are nutritionally superior to conventional eggs.  When I don’t have time to get to the markets or the co-op, I do sometimes buy organic supermarket eggs, but it’s important to say that organic supermarket eggs are not the same as eggs you would get from a local farm or your own backyard.

I recently saw a quote that said:

The greatest prison people live in is the fear of what other people think.

Somehow, that resonates much deeper than the standard “don’t worry about what other people think” one liner.  That just makes me think “don’t boss me.”

I mean, it’s probably not a bad idea to care a little bit about what other people think… especially if it motivates you to do things like brush your hair and to change out of your food splattered yoga pants before leaving the house.  But maybe not caring so much that it paralyzes you from trying new things or being an authentic version of yourself.  In that case, forget everybody.  Do what you want!  (Whoops, I think I’m bossing you.)

Are you sick of zucchini yet? Well hang tight, we’ve still got a few weeks of summer left.

With a frittata on the dinner menu, I gathered up the latest round of CSA zucchini (both yellow and green) for shredding and salting before I made it sit in the corner to think about what it did wrong.

Crustless Spinach Quiche

Dinner for breakfast, breakfast for dinner.  Someone must have set the clocks ahead 12 hours.

Tonight was a crustless quiche with spinach, mushrooms, red pepper and onions.  Crustless quiche means no grains or refined carbohydrates, it saves you on calories too.  I was pretty strict with my grain intake for a while after reading Deep Nutrition at the end of last year (i.e., eating very little grain) but I am eating more grains from time to time now.

OK, that’s not true. I had plenty of time for breakfast this morning, I just ran out of time. This is why God invented Travel Mugs. For people like me who continue to underestimate how long it will take to get all of the children out the door on time.

Today’s green goodness was a blend of orange juice, spinach, cottage cheese, broccoli and frozen strawberries.  Much like this smoothie, except without the banana – only because I forgot it, not because I’m holding a grudge against bananas or anything.

A Greener Birthday

My biggest gal turned 9 years old today. NINE! I guess that means I must have been 16 when she was born because I can’t possibly be a day over 25 myself.

Ava’s birthday breakfast request was bagels, and so bagels it was.  After Deep Nutrition, bagels became more of a treat around here – this is why it was a birthday request. Bagels have been missed!

Some greens still managed to elbow their way into the birthday breakfast line up – a spinach and mushroom omelet with half a French Toast bagel (awesome!) and cream cheese.
