Muesli (with Pumpkin Seeds!)

I’ve been on a muesli kick for the last two weeks or so.

And just in time, because pumpkin seeds are on the list of healthy, affordable foods – and pumpkin seeds go great in muesli!

Pumpkin Seeds or Pepitas

If you aren’t in the know, muesli is a cereal combo (usually) made with oats, nuts, seeds and dried or fresh fruit.  Bananas have been my fresh fruit of choice lately, but frozen, thawed strawberries have been known to make an appearance in my bowl too.

This is one of the current meals in my breakfast rotation.  I call it a “Breakfast Bowl” because it’s not cereal or oats, it’s just a bowl full of stuff.  And it’s for breakfast.

Today it was a Strawberry Coconut Banana Chia Breakfast Bowl, but your choice of toppings/adjectives is completely up to you.

Tailor this to suit your own tastes –  there are lot of ways to make it a little different each morning too.  Today’s chia breakfast bowl base:

It was another egg and everything bagel kind of weekend here.

(That means it was a good weekend.)

But now it’s Monday, and we’re moving on to better and bluer breakfasts.

These little wild blueberries from Woodstock Farms are my current favorite small blue thing.

I pop about a half cup of them into a dish and let them thaw in the fridge over night.

Or, if you forgot about them last night like I did, an hour on the counter at room temperature works too.

Not Another Cookie Recipe

That’s great, but we’re not going to talk about fish today.  We’re going to talk about cookies.

One of the best things that happens when you learn how to cook is learning out how to get along without a recipe.

If you make something a couple of times, soon you begin to understand what ingredients and steps are most important.  Make something a bunch of times and soon you begin to see the variety of ways you might be able change it up.  Make something a couple of dozen times and soon you start see cooking from a whole new perspective.
