Souper Combo

I ate this exact turkey sandwich and soup combo for lunch for three days in a row,

Soup and Salad Lunch

for two reasons:

1. Because it was really good.

2. The recipe I’m about to share makes a lot of soup.  Halve the recipe if you won’t be able to eat/share 10 cups of soup over the course of three or four days.  Now that Zak works from home, we have no trouble eating this much soup in a relatively short period of time.  You could also freeze the leftovers to have on hand when you don’t feel like cooking some time in the future.  (I need to get better at remembering to do this!)

This was supposed to be post #9 of 44 into this series of Healthy Eating on a Budget.  Cauliflower was on today’s agenda.  Unfortuantely, it wasn’t until after I made, photographed, devoured and sat down to write this post about Red Pepper and Cauliflower Bisque that I realized cauliflower is NOT on the list of affordable healthy food items under a $1 that I’ve been working from.

Can you hear me groaning from here?  Planning fail.  Well guess what!  I’m going make a case for cauliflower anyway, because that list of 44 healthy foods is not the boss of me.  More importantly though, this soup was too delicious to not share.

Indian Spice Rubbed Pork Chops

A few weeks ago I went out to dinner with some girlfriends and did my favorite thing: ordered something that I never make at home myself.

This time?  A pork chop.

Yes, pork chops – not terribly exciting, but the one and only time I made pork chops was as a newly married 20-something who knew very little about cooking, especially when it came to cooking meat.  Those pork chops I made in our little apartment more than a decade ago more closely resembled an old shoe than a juicy, great tasting piece of well cooked pork.

Red Hot Cauliflower

There was some green on our dinner plates tonight, but more importantly, there was red!

Black Bean Burgers with Spicy Buffalo Cauliflower

Spicy “Buffalo” Cauliflower was tonight’s side dish to homemade black bean burgers.

You’ll need:

1 large head of cauliflower, cut into florets
3 Tbsp butter, melted
1/3 c hot sauce
1/3 c apple cider vinegar

Pre-heat oven to 450. In a separate dish, melt butter, stir in hot sauce and apple cider vinegar. With cauliflower in a large mixing bowl, pour sauce over cauliflower and use a large spoon to stir cauliflower and coat well with buffalo sauce. Bake for 25 minutes.

Cauliflower is not one of those vegetables I get really giddy about.

I mean, I like cauliflower and all – but you won’t see me running to the produce section while shouting and hip-hip-hooray-ing with my arms flailing above my head like a wild woman when I see that cauliflower is on sale.

I’m probably more likely to say “oh, cauliflower is on sale this week? that’s cool.”

This recipe makes me slightly more giddy about cauliflower than usual though. Cauliflower Mac and Cheese? I didn’t invent this idea, but I did think “I’d eat that” when the idea was presented to me. My next thought was “I need to make that.”
