1 lb ground beef
1 lb pork sausage
1 egg, beaten
small carrot, finely diced
small stalk of celery, finely diced
1/2 medium onion, finely diced
1 clove of garlic, minced
1/4 - 1/2 c ground almonds
Salt and pepper to taste, oregano, garlic powder
Optional cayenne pepper and a dash of Tabasco if you like it spicy!
Combine all ingredients, use an ice cream scoop or 1/4 c measure to scoop meat
and form into balls with your hands.
Homemade Sauce
16 oz can of diced tomatoes
2 Tbsp tomato paste
diced onion (the other half from your meatballs!)
diced carrot
2 cloves minced garlic
Salt and pepper to taste, basil (fresh or dried)
Preheat oven to 350. Optionally, brown outside of each meatball
in a frying pan (coated with a little olive oil to keep them from sticking) before
moving meatballs to sauce. In an oven safe dish, cover meatballs with sauce,
cover baking dish with a lid and bake 40 - 50 minutes, or until they are no longer
pink in the middle. Bake time will vary based on the size of your meatballs.
Optionally cook in crockpot, high for 1 hour, then low for 3 - 4 hours.
