Italian Sausage and Vegetable Soup with Kale


Yield: 6 - 8 servings


1 lb loose Italian sausage

1 large yellow cooking onion, diced

2 - 3 cloves of garlic, chopped

1 bell pepper, chopped

2 - 3 carrots, peeled and chopped

28 oz canned tomatoes

2 c water or broth

1 bunch of kale, chopped into bite sized pieces

basil, oregano and thyme to taste

 

Add the sausage to the pan, allowing it start browning. Just keep chopping

and heaping in vegetables as your sausage cooks (except the kale). 

 

Once you can see the sausage is mostly brown, add tomatoes and the 2 cups

or water or broth.  (Between the sausage and all the vegetables this soup is not lacking

for flavor, so broth is definitely optional.)

 

Allow soup to come to a boil.  Once soup is bubbling, stir in chopped kale and

turn heat to low. 


Simmer on low for 30 minutes or so, stirring occasionally while the kale cooks

down and all the flavors blend.
