1/4 c butter, softened
1/4 c maple syrup
1 banana, mashed
1 egg
1 c pumpkin puree
1 tsp of vanilla extract
dash of cinnamon
2 c rolled oats
Pre-heat oven to 350 degrees. Combine butter, maple syrup, banana, egg, pumpkin, vanilla and cinnamon.
Once well mixed, stir in oats 1 cup at a time.
Use 1/8 cup measure (approximately 2 Tbsp) to for each cookie, forming into patties with your hands
before moving onto an un-oiled cookie sheet.
Bake for 11 - 13 minutes. Cookies will be soft and chewy.
