Cauliflower (Not Mac) and Cheese

Makes 9 - 12 servings

Ingredients

1 head of cauliflower, chopped into bite sized pieces

2 Tbsp butter, divided

1 - 2 cloves of garlic, sliced

1 mayan onion, diced

1 cup of milk

1 egg, beaten

8 oz sharp cheddar cheese, shredded

1 tsp dijon mustard (or dry mustard powder)

1/2 tsp of salt

pepper to taste

sprinkling of paprika for topping

 

Instructions

 

Pre-heat oven to 350 degrees.  Spread chopped cauliflower on a baking sheet and roast for 20 minutes.

 

In a large pan, sauté garlic and onion in 1 Tbsp butter until soft.  In a mixing bowl, combine egg, milk, mustard and salt and

then stir in shredded cheese.  With vegetables still warm, stir in second tablespoon of butter, followed by cheese sauce

and then roasted cauliflower.

 

Lightly oil a baking dish and transfer vegetable cheese mixture.  Sprinkle with paprika if desired.  Bake for 45 minutes,

allow to rest 10 minutes before serving.
