How To Make Your Own Kefir

 

Supplies needed:

 

1 glass jar

1 breathable cover (coffee filter or cheese cloth) and a something to secure it (rubber band)

towel and clothes pin (optional)

strainer and bowl

Air tight container to store kefir

Air tight container to store kefir grains if necessary

 

1 - 2 Tbsp kefir grains

2 - 3 cups of milk

 

Instructions:

 

Place kefir grains in a jar and add milk, filling jar only 2/3 to 3/4 of the way.  Top with a breathable cover. 

If desired, wrap jar with a dish towel and place jar in a warm, safe place.  About 70F/20C is ideal for fermentation.

 

Allow milk to ferment for 24 to 48 hours.  Gently rock and swirl milk occasionally when you walk by or think of it.

When your milk has thickened up and soured to your tastes, it's ready!  The longer is ferments, the more sour and

tart it will be.

 

Strain kefir into a bowl.  Sift and swirl kefir until all the kefir has drained into your bowl and you are left with

kefir grains in your strainer.

 

Move kefir to an air tight container and store in refrigerator.  (Some sources say kefir will store for months!)

 

You can now move your grains into a new, clean jar and start the process again to make more kefir.  If you

want to take a break from making kefir, move kefir grains to small, air tight container, cover with milk and store in

the refrigerator.
