Crunchy Coconut Cups

Makes 12 big cups or 24 small cups

2/3 c coconut oil, melted

1/2 c almond butter

1/4 c cocoa powder

1/4 c maple syrup

1/4 c chia seeds (optional)

1/4 c hemp seeds (optional)

1/4 c shredded coconut (optional)

pinch of salt

 

Melt coconut oil in microwave for about 60 - 90 seconds.  In a medium sized bowl, add almond butter,

cocoa powder, maple syrup and salt to melted coconut  oil and stir until smooth.

 

Stir in optional mixins.  While your mixture is still warm and runny, transfer mix to cupcake wrappers

(or candy molds) - 2+ Tbsp for big cups, 1+ Tbsp for smaller cups.

 

Move to fridge or freezer to firm up for about 20 minutes.  Transfer to air tight container and store in

fridge for softer texture, or freezer for a firmer texture.
