The Skinny. Another book with skinny in the title. It practically leapt off the shelf and into my hands at the library while perusing the New Books section. I actually picked this one up a few weeks ago but was thinking about it on my run this morning and wanted to write about it.

This is a weight loss/diet book. After briefly thumbing through the pages while I kept my children from running through the adult portion of library like wildebeasts, I decided it was likely to still have some value. I checked it out, practically guaranteeing the library at least $.25 in late fines.

The author talks about 2 phases to his diet approach. Phase 1, which lasts about 3 – 4 months, consists of getting all your carbs from complex carbohydrate sources, namely, green vegetables. You get one serving of starch at dinner, and it still has to be a complex carb, like brown rice, whole wheat pasta, quinoa, etc.

Meh. Not for me.

On to Phase 2. The duration? The rest of your life. He says you can still have bread, fats, sweets, etc, but to eat them LAST. The first part of your meal should be a large serving of green veggies. Jillian Michaels talks about this too on her radio show, calling it volumetrics. Basically, you fill your stomach with foods that are less calorie dense, like green vegetables. THEN you can eat fats, starches or something sweet at the end of your meal. The idea is that you stretch your stomach sooner on less calories, which releases leptin, the satiety hormone, and ideally eat less of the foods that are more calorie dense.

With any advice I get, whether on nutrition, exercise or parenting, from a book, a blog, a magazine or a face to face conversation, I tend to treat it like a buffet: Take what you like and leave the rest.

So while I don’t follow this plan exactly, I have definitely increased the amount of green vegetables I eat, replacing grains and starchy vegetables for more green vegetables. I’m not one to put a lot of rules on the order in which I eat things, but I like the idea of stretching my stomach, releasing leptin and feeling fuller sooner with less calories. Basically, I just make sure plate is chocked full of vegetables.

I’ve been doing this for a few weeks now and I’ve noticed two dramatic changes.

1. I have A LOT more energy on my runs. It is AMAZING. It actually took me a while to put two and two together. I thought it was just a fluke until I looked back at what I had been doing differently. In the past I’ve always had good runs and not so good runs, feeling tired and just wanting it to be over. Lately, every run is a good run! I feel fabulous the whole time and feel like I could just go forever. (Thus why I started thinking about this today on my morning run.) I’m sure my days of not-so-great-runs and workouts are not gone forever, but I’m impressed with what this has done for me so far.

2. Cravings for sweets and starchy carbohydrates are practically non-existent. I’ve struggled with this on and off these last few months, especially over the winter. But since I’ve upped my non-starchy vegetable intake, I can’t believe how much I’m NOT fighting the urge to dive head first into the cereal box at night, and thinking less about food between meals and snacks.

Think: adding spinach to smoothies, replacing sweet potato fries with large piles of steamed veggies, salads as big as my head. Eating vegetables is most definitely not a new concept, but consciously choosing the right vegetables and the general order that I eat them is doable. And completely worth it! I’m still eating starches and grains (I’m not giving up my oatmeal, corn, carrots, wheat bread, chocolate!) but just eating less of it, mainly because I fill up on vegetables first.

So that brings me to my morning run. It wasn’t raining when I got up, just overcast. I scrapped my treadmill plans almost immediately and opted to run outside instead.

6.24 miles in 49:32, with an average pace of 7:56.

Skinny Bitch suggests eating only fruit for breakfast. Jillian says to always eat something before you work out, which I don’t always do. While the idea of eating ONLY fruit for breakfast makes me want to run screaming into the night, as I would rip right through that and be hungry again in 5 minutes, I decided to combine these two ideas this morning and ate some watermelon while catching up on emails and sitting at my desk for a half hour before heading out on my run.

Once home and cooled down, it was cereal all around for breakfast this morning.

Half a small container of 2% Fage
3/4 c (or so) of Kashi’s Heart to Heart
1/2 a sliced banana
A few spoonfuls of sliced strawberries
A sprinkle of homemade granola
A pour of unsweetened vanilla hemp milk

Ava’s bowl? Wegmans brand cheerios and vanilla rice milk, a dish of strawberries.

That’s right, I have at least 4 different kinds of milk in my fridge at any given moment. Hemp milk? Almond milk? Rice milk? Soy milk? Cow’s milk? I’ve got them all!

Sorry green veggies, I’m still eating grains for breakfast. At least for now. 😉

Eight Years Later

Completely OUT of vegetables on Sunday I played Supermarket Sweep in the produce section last night and spent about an hour prepping vegetables today. I see… I see… a GIANT salad in my future… yes, yes, a salad for sure.

First my gorgeous watermelon:

That should be enough to last a few days, wouldn’t you say? And that wasn’t even all of it, Ava and I each had a serving that I didn’t put away!

Then I attacked the produce drawer.

A lot of work but totally worth it, and it saves so much time, money and calories in the long run. A few days ago my sweet friend Jennifer asked if I had any tips for keeping veggies fresh, and it occurred to me today that THIS is my tip! If I take the time to prep everything and have it and ready to go, I’m much more likely to use it, instead of by-passing it in the fridge for something else if I’m in a hurry. And if I’m short on time to make something before we run out the door for in impromptu play date or picnic lunch, it’s easy peasy to throw a quick salad or veggie snack pack together. I don’t always have time to do it like this, but when I do, I’m always so glad I did.

My mom came over tonight to watch the girls while Zak and I went out to dinner by ourselves for our 8th wedding anniversary. We rarely go out to eat because I feel it’s too expensive. I’d rather spend the money on organic produce and jars of almond butter. I also feel like I can make it better and healthier for less money at home. Despite all that, it was nice to get out by ourselves and let someone else do the cooking and cleaning up. Apparently I’m not yet a hard core food blogger because I could not bring myself to whip out my camera at the restaurant.

I will say that tonight was an experiment. I kept a bunch of “healthy dining out tips” in mind as we perused the menu at the Italian restaurant. When Zak said he wanted the eggplant parm, and I had been thinking the same thing… I suggested we get one entree and split it, knowing they would bring us a HUGE portion, much more than we needed. Zak was game. We also ordered the artichoke spinach dip as an appetizer to share, plus salad and bread (that I passed on). Tomatoes, eggplant, artichokes, spinach, salad…. a nice selection of vegetables if I do say so myself. At the end of our meal we both agreed that we were completely satisfied but not stuffed, and we still had a nice selection of things to eat. He also said that he was full but if there was more food sitting in front of him right now he would have eaten it. Old Me would have too, so I was glad to have the portion control built right in to this meal.

With one appetizer, one entree and two drinks, our bill came to $6 thanks to our gift certificate! I was totally pleased with our dining experience and experiment!

We passed on dessert, thinking we would stop somewhere on the way home. After some stops at a few stores we realized it was getting late and we should probably be getting home to relieve my mom from her child watching duties. I wasn’t feeling like I needed dessert at that point anyway, so I was even more glad we decided to pass on something sweet at the restaurant after dinner.

Life is sweet enough without it.

Memorial Day 2001

Memorial Day, 8 years ago, Zak and I were newly married and on our way to Aruba!

Memorial Day 2009? We cleaned the garage.  8 years.  Sounds about right.

On tonight’s dinner menu: black bean burgers with a side of kale chips.  McDonald’s ain’t got nothing on this version of burger and fries.

I first heard about Kale Chips on Fat Free Vegan, but she didn’t have much luck with them, so it wasn’t until I read Kath’s post about them that I finally tried them. If you’ve yet to discover kale chips, it’s about time you did!

I pretty much follow Kath’s method. Today I used Kale in a bag for the first time and it made it 100x easier to just take it triple washed from the bag and plop it down on a cookie sheet! Pre heat the oven to 350, place trimmed, washed and dried kale on a cookie sheet. I spray mine with a bit of olive oil using my Misto and then sprinkle them with a bit of salt and Parmesean cheese. Bake for 10 minutes, flip and stir around with a spatula, bake an additional 5 – 10 minutes as needed, until chips are dried out and crispy!

These are awesome and oh so healthy it hurts! We love these in our house. Well, Zak and I love them.  The girls have other thoughts.

Skinny Bitch

I finished Skinny Bitch, by Rory Freedman and Kim Barnouin this weekend. This book is for anyone looking for a good bitch slap about their eating, drinking, smoking, processed food, sugar, meat and dairy eating addictions. There wasn’t really anything in this book that was new to me, but it definitely reaffirmed my choice to be vegetarian and made me think more about my dairy consumption. Did I mention the authors are both vegan and that’s the diet they are advocating for? Oh yeah, sorry. The authors are both vegan and they advocate a vegan diet.

There are two reasons I don’t eat meat, the first is for health and the second is for ethical reasons. The Dead, Rotting, Decomposing Flesh Diet chapter was the literary version of Peta’s Meet Your Meat that I still have on VHS in my closet here if you’d like to borrow it. I’ll even kick in the puke bucket and box of kleenex to go along with it.

The chapter on dairy starts out on the wrong foot for me giving a few inaccuracies about breastfeeding, but maybe I should save that for a future breastfeeding blog that I won’t create. When a child is anywhere from 12 to 24 months old, a mother stops breastfeeding. Her milk dries up. The child will never drink breast milk again. Now wait just a doggone second. There are plenty of children who nurse beyond 2 years (AHEM) AND children who wean while their mother is pregnant and go back to nursing once the new baby is born. Oh wait, I said I was going to save that, wasn’t I? Their point is basically that humans, or any species for that matter, do not need milk much beyond infancy, and that cheese and milk and ice cream are keeping you from being a Skinny Bitch.

During my weight loss last year I cut down considerably on the amount of dairy products I ate, and even experimented with veganism for about a month last spring. While I’m not ready to cut dairy completely out of my diet, I do feel better choosing organic dairy the majority of the time, so that at least we are avoiding the hormones and antibiotic issues that surround cow squeezings. (The perfect opportunity to plug my mom’s entry in the Urban Dictionary!) It did make me more mindful of how much dairy I consume and eating less of it. I completely agree that we do not NEED dairy to live and be healthy, and in many cases dairy is actually making us unhealthy. We are the only species that drinks the milk beyond infancy or drink the milk of another species. Zak says: What about cats? Oh yeah, I guess a cat will drink cows milk if you put it down in front of them, won’t that? Anyway, I digress.

The crude language and name calling got a little old at times but I also find myself laughing out loud and making anyone within ear shot listen as I re-read aloud what just made me laugh.

I love the message they send though about Trusting No One, and that we cannot have any faith in the governmental agencies that are supposed to be protecting us and our food supply. We have to rely on ourselves when it comes to our health, whether it’s what we put in our bodies or how we birth our babies. (Oh wait, they didn’t talk about birth…. that was me.) They are exactly right. You can TRUST NO ONE. Educate yourself, do your own research, consult people you consider to be experts, make your own choices based on your own findings when it comes to your health.

They definitely tell it like it is and I like that. If you want to be a Skinny Bitch, you can’t be a pussy, get out there an exercise, cut out the processed junk from your life.

I like that they sing the praises of organic foods and produce, but given this book was written in 2005 I feel a little sheepish having only really gotten on this boat within the last year. Better late than never, I suppose.

I didn’t like how much they push fake meat and cheese products on readers, but at the same time when we first became vegetarians we ate a lot of that stuff too, and it is a helpful way to make the transition from being a meat eater to vegetarian or vegan a little easier.

This book was a quick read and entertaining too, and is definitely worth taking a look at if you are motivated when someone is totally blunt with the truth and calls you names too. They tell it like it is and there is no beating around the bush or gentle hint dropping here.

Thanks to Running Towards a Dream I was inspired to make a new flavor of hummus I’ve never tried before.

With that I bring you: Spinach Artichoke Heart Hummus.

This. Rocked.

I threw a large handful of spinach in to the steamer and let it steam for about 5 minutes until it was soft and wilty.

While it was steaming, I put the following into the food processor:

1 can of garbanzo beans, drained but not rinsed

5 artichoke hearts from a can

1 Tbsp (+/-) Joyva Tahini

2 Tbsp (+/-) Canola oil

2 Tbsp minced garlic packed in water (about 6 cloves??)

A dash of salt

Then added the steamed spinach when it was done.

Brown Monsters

Green veggie smoothies are sweeping the food blogs. I unintentionally adopted the green smoothie name coined by Angela at Oh She Glows and we call them Green Monsters in our house. The girls only had to hear me say that once and they were all over it. Calling something a monster AND they get fight over who pushes the buttons on the blender?? A match made in heaven. They ask for Purple and Pink Monsters, meaning they want me to leave out the spinach. So close!

Here I threw in frozen organic strawberries (Red), frozen organic blueberries (Blue), a chunk of firm tofu, a bunch of handfuls of spinach (Green) and some unsweetened vanilla hemp milk.

Why yes it is.  Thank you for noticing. Red + Blue + Green = Brown. Don’t say I never taught you anything.

With a little homemade granola sprinkled on top. Rock on. And yes that’s a jar I’m about to drink out of. An almond butter jar to be exact, why do you ask?

I would be lying if I said you can’t taste the spinach. And to be fair I put A LOT in… two more handfuls after the first handful condensed down as it was blended in. Can you taste it? Yes. Does it taste bad? No.  Do want me to make you a Brown Monster?  You know you do.

Change in Plans

Last night I planned a nice long bike for first thing this morning. But someone decided they were going to get up with me at 5:30. I decided to make the most of it and invited that someone to come along with me in the bike trailer with an Ariel mug full of Heart to Heart and a travel cup of OJ. Still a little hesitant, I told her she could wear her 3 Sizes Too Small “flip flops” that she loves Oh So Much.

While it wasn’t the long, quiet, peaceful morning ride I had envisioned… and was instead was quick, whiny, far from peaceful, not to mention TOUGH ride lugging around an additional 28 lbs, it was still better than nothing. We managed 5 miles in 24 minutes.

Once home I asked the Strawberry Shortcake DVD to babysit so I could hang with my pal Jillian for 27 minutes while she cracked the Level 3 whip.

What was for breakfast you ask? Chocolate Banana Overnight Oats!

Soaked over night, 1/2 c rolled oats, 1/4 c Stonyfield Farm LF vanilla yogurt, 1/2 c chocolate almond milk and a heaping tsp of unsweetened cocoa powder. Chocolaty goodness!

Topped this morning with sliced banana, a sprinkle of granola, ground flax and a few walnuts.

Blue Skies, Smiling at Me

It is SO easy to get up when the days start getting longer and the air is warmer!  I beat my 6am alarm this morning by 45 minutes and was up and raring to go at 5:15.

With Jillian Micheals chatting in my ear, I went for slow and easy 8.19 miles in 1:06:45, making my pace about 8:09.  A fabulous run under this amazing blue ski this morning!

Yay to breakfast cookies and a cup of coffee after a nice long run!  My usual weekend long run got bumped up in the schedule due to the holiday weekend. 😉

Breakfast Cookie

Newman’s Own Organic Coffee with a splash of 2% organic milk (thank you Jillian for teaching me the importance of organic coffee and milk!) and a breakfast cookie made last night with 1/2 cup oats, 1 – 2 Tbsp ground flax, a scoop of crunchy almond butter, 1/2 mashed banana and a few glugs of vanilla hemp milk… topped this morning with banana slices from the left over half.

Ava went with Aunt Ellen to the zoo today while a cranky, Little Miss No Nap For The Past Two Days stayed home and went down for a very early, and very necessary, nap.

I just finished up lunch and have a new recipe to share.

Curried Chickpea Sandwich Spread

Serves about 3.

1 can chickpeas, rinsed and drained

1 medium carrot, peeled and grated

1 small onion, chopped

2 – 3 Tbsp mayo

A few shakes of curry powder, cumin, cilantro and S&P to taste.

Mash chick peas with a fork or potato masher, add grated carrots and chopped onion. Curry Sandwich

Add mayo and spices and stir!

An amazing sandwich spread, or dip for cut up veggies or crackers.

I made a sandwich with a whole wheat Arnold’s Sandwich Flat, spinach and a pile of steamed broccoli, cauliflower and mushrooms topped with some Parmesan cheese.

Overnight Oats

I discovered the wonder of overnight oats a few years ago when my mom described a cold oatmeal dish she’d had for breakfast while on a cruise. It sounded right up my alley so I recreated it at home and life has never been the same. I love overnight oats for their ease and the fact that when you use the right ingredients and toppings, oatmeal doesn’t have to taste like wallpaper paste.

Overnight Oats, the basics:

1/2 c rolled oats
1/2 c milk
1/4 c LF vanilla yogurt

Here I used unsweetened vanilla hemp milk, but nowadays I almost always use unsweetened almond milk. For yogurt – sweetened, plain or greek all work – or even no yogurt at all. The oats will still soften up without it, whichever you prefer.

I use to use to sweetened yogurt, like Stonyfield Farm Organic Low Fat Vanilla, but my palate has adjusted and now prefers the flavor of plain, unsweetened yogurt. 2% Chobani Greek yogurt is my current yogurt of choice. I get any sweetness from my fruit toppings like blueberries, strawberries or bananas.

Sweetened yogurt (preferably not sweetened with high fructose corn syrup) can be a great place to start if you are trying to break yourself of processed breakfast foods like sugary cereals (or worse!)

Add oats, yogurt and milk into a bowl and mix until well combined.

Cover and put in the fridge overnight, or even just an hour will do.  I’ve come to discover the oats soften up fairly quickly.

In the morning, top with nuts, nut butter, fruit, granola… the combination’s are nearly infinite and can change with the seasons; spring, summer, fall or winter.

Here I’ve topped mine with a tablespoon of ground flax seed, 3/4 of a banana, a couple of cut up organic strawberries, and a sprinkle of homemade granola for some crunch!

The man of the house and our first born enjoy overnight oats too – Ava takes hers plain (just milk and yogurt) and Zak likes his with raisins (soaked with the oats overnight, no yogurt), cinnamon and agave nectar.

Hot or cold, oats can be the blank canvas to your healthy breakfast masterpiece.

Lilac 5K SUCCESS!

At the start of the year my best girlfriend Sharon was on a mission to lose 30 lbs before her 30th birthday. We talked about how running was a great way to lose weight, or in her case, lose the baby weight… I mentioned how helpful it was for me to have a race in mind to train for when I started running a few years ago. Motivation is a wondrous thing. I’ve run the Lilac 10K the past two years in a row and thought it would be a lot of fun to do the 5K together this year. Sharon was game and started training in February.

I really like the Lilac 10K/5K because it’s a pretty popular race that attracts a lot of runners from the Rochester area. It weaves through some trendy neighborhoods in the city and is also fun because it feels like the start of the summer race season!

Fast forward through the last 5 months; Sharon’s been running and lost all her weight and then some! She loosely followed Hal Higdon’s 5K Novice program which is similar to the Couch to 5K program, both great for people who want to begin running.

The thermometer said it was 43 degrees outside when I came downstairs just before 6AM. COLD for a mid May morning! I fueled up with a chocolate breakfast cookie and TWO cups of coffee. (YAY caffeine!) Sharon arrived at 7:00 and we were on our way.

Due to the start times of the 5K (8AM) and the 10K (9AM) and our desire to drive together, I decided I would do the 5K this year instead of the 10K. My pace dramatically picked up last year when I trained all summer for the marathon. Dropping 35 lbs surely helped too! I’ll admit that I was curious to see what time I could a run 5K in, knowing my current 5K PR (Personal Record) was 27: and change.

After a little running and some dynamic stretching with butt kicks A LA Jillian’s 30 Day Shred we were warmed up and made our way to the start line to join the other 862 runners. lt was chilly and windy but the sun was shining and we were ready! The starting line was PACKED with people. The starting gun fired and we were off, each making our way through the crowd at our own pace.

My super supportive and devoted father (and fellow runner!) called on Saturday to predict a time of 21:52, which would mean a race pace of about 7:02. That would be pretty damn fast for me, but I wondered…. maybe? I kept that time in my mind as I ran and was pumped to hear the 1st mile split shouted as I ran by: 7:04! 21:52….hmmmm… just maybe??

Somewhere between mile 1 and 2 my car keys fell to the ground from the TWO safety pins I had used to secure them to the waist of my tights with. CRAP! I had to stop, back track and retrieve them and get back on my way. 5 seconds (??) lost!

At the 2 mile mark I looked at my watch: 14:25… making my overall pace now about 7:13. I needed to pick up the pace if t I was going to hit 21:52!

I was feeling ok and running a pretty fast pace, anxious to see the clock as I rounded the corner near the finish. I was a bit bummed to see it already said 23: when the time finally came into my line of sight. I had missed 21:52 but still sprinted to cross the finish line at 23:21.

I snagged some water and ran back along the side of the course to watch for and cheer on Sharon… she was not far behind!

I missed her crossing the finish line due to the throng of people but we caught up with each other and then found Mat, Haylee and Lauren who had come to cheer Mama on! (Where was my crew? Home sleeping! hehehehe…)

It was fun to listen to her version of the race, seeing a man running the race barefoot, being pushed and crowded and practically stepped on by other runners as she made her way through the start, noting that she preferred to run with music (we both ran sans iPods) and that MapMyRun must be full of lies because the 3.1 mile race seemed a lot further than the 3+ miles she was use to running during her training runs around her house! (LOL!)

So in summary, our much anticipated 5K was a great success!

I set a new PR of 23:21, getting 3rd place among females aged 30 – 34, 88th overall!

Sharon ran a fabulous first race with a time of 28:48, 20th among females aged 25 – 29, placing 333rd overall!

A HUGE congrats to Sharon for running today’s race and meeting all the goals she set for herself! (But this should come as no surprise to anyone who knows Sharon!) It’s been a lot of fun getting ready for this race together. We’re already plotting our next 5K later this summer. And we both have times to beat!

21:52 here I come. 😉
