Stay at Home

Today I am taking my title as Stay At Home Mom quite literally and we are not going anywhere today. No. Where.

Well, I did go for a run but that doesn’t count. I didn’t schlep children in and out of the car, carry arm loads of extra clothes, snacks, toys, mail, papers and shoes out the door with me, so really it doesn’t feel like I’ve gone anywhere at all.

On my didn’t-go-anywhere run, my lovely albeit slightly boring digital watch told me I was gone for 36 minutes. My inner GPS says I probably went about 4 and a half miles.

I’ve got a butt load of greens to eat up so a green smoothie was on the menu for this morning.

1 banana
1 1/2 cups of spinach (approx)
2 Tbsp ground flax seed
1 cup unsweetened vanilla almond milk

Thursday Breakfast

+ 1 toasted slice of ezekiel cinnamon raisin toast and about a 1/2 tbsp of almond butter.

All this for 340 calories! What a steal!

Can I give a big shout to spinach for being so little in calories but so big in everything else?

Thank you spinach for being mild enough in flavor that I can throw you in a banana smoothie and barely notice you at all. You are so filling and have made my runs so much easier so I introduced you into my life on a regular basis. You truly are a special vegetable. Thank you.

In fact, I love spinach so much I’m going to stay home with it today! All day! Do you hear me spinach? ALL. DAY. Just for you.

Zak didn’t exactly get to go home early today due to garlic breath, but he did get home earlier than usual tonight. We loaded the whole family into the car and hit up the pool at the fitness center for some family fun and exercise too.

Swimming is probably my least favorite form of cardio, but I rather enjoyed it tonight. Maybe because I haven’t swam laps since the spring? Whatever the reason, it was a nice change of pace and I swam laps for 30 minutes, alternated 100 yards of freestyle and 100 yards backstroke while Zak entertained children in the shallow end. He got his turn to swim laps while I took cold, wet girlies into the locker room for nice long hot showers on someone else’s dime (forgive me, Mother Earth), blow drying hair and hiding in lockers until dad was done and ready to go.

So what’s the best thing to do after an evening at the pool?

First, make a bucket of air popped corn.

Breakfast Garlic Breath

Big juice, little juice. Carrot juice, garlic juice. Which juice is which juice?

Yes, that’s right. That little glass. That very little glass. That very little glass that is only half full is the one with garlic in it.

Zak – AKA Garlic Romancer, asked me the other day about putting garlic in juice. I told him I’d never seen it in any juice recipes but he was free to browse The Juicing Bible I borrowed from the library and admittedly, have barely cracked up open.

The Juicing Bible says? 4 juice recipes with garlic. OK, so I guess garlic in juice is not completely unheard of. I’m still not sure I’m fully on board though. Especially this morning when I had sweet carrot apple ginger juice on the brain and as I’m putting the juicer together he’s chanting Garlic! Garlic! Garlic! like a cheerleader for the away team at the Vampire Senior High basketball home game.

I’m sorry, I can’t do it. Like a long run, I need a day to mentally prepare it and garlic in my juice feels a lot like long run. I’m not ready. Maybe tomorrow after I think about garlic juice all day, dream about garlic juice all night, psych myself and promise garlic juice won’t be that bad and I can eat a huge piece of cake once I’m done.

So, we compromised. I made my sweet carrot juice and after my glass was well on the other side of the room, I made a second glass for him with the exact same ingredients + two cloves of garlic. Two cloves because I put the first clove in and I didn’t see a thing come out of the spout. Not even a drop. I could smell it, but I couldn’t see it. Well, what’s one more clove of garlic then? Go big or go home, right Team Werewolf?

I poured him his glass of carrot apple ginger garlic juice and then, like speed work and a let’s-just-get-this-over-with frame of mind, I poured myself a little sample of garlic juice.

The verdict? Surprisingly good! I will not be held responsible though if Zak’s coworkers kick him out of the office early today. Garlic juice was not my bright idea, he gets full credit for it and all the exhalation repercussions that come with it.

I’ve fallen behind with some thing’s around here so with fingers crossed that Zak’s garlic breath gets him sent home early, my work out today has been pushed back to this afternoon. I spent my child-free hours this morning at my desk trying to get caught up.

Once my sweet and savory juice buzz wore off I dug out my batch overnight oats. Yesterday’s quinoa breakfast made me realize how long it’s been since I’ve had a bowl of oatmeal. Today was the day.

1/2 c organic rolled oats
1/2 banana
1 Tbsp almond butter
1/2 unsweetened almond milk
1 Tbsp ground flax

Overnight Oats

Soaked for a few hours this morning and topped with the other half of my banana just before I was ready to eat. I think I’ve said this before but I’m loving this dairy free version of overnight oats, compared to how I use to make it with vanilla yogurt.

The banana makes it sweet, the almond butter gives it a great flavor. The almond milk softens the oats, it’s like magic in a bowl.

I’m thinking now I’m going to have to try garlic in my overnight oats for tomorrow – what do you think?

A Healthier Moose

One afternoon a couple of weeks ago I was at Wegmans, minding my own business, looking through the nice display of huge heads of cauliflower and searching for the perfect head that was destined to come home with me.

I noticed a woman checking out my head (talking about the cauliflower head here) as I approached the produce scale to get my bar code sticker. She commented on how beautiful it looked (I was hopeful she was talking about the head attached to my neck now…) She then told me how much she loves cauliflower. I agreed and we went on to discuss the various ways we like to eat cauliflower… steamed, raw, roasted or standing on our heads (cauliflower or otherwise), we’ll happily eat it.

This lovely stranger then went on to describe a cauliflower pie recipe that she loves and makes frequently. She told me this recipe has a crust made with shredded potatoes and the potato crust is filled with sauteed cauliflower and cheese. From her gestures and movements I could tell she wanted to write the recipe down for me, but then suddenly with excitement she said “It’s in the Moosewood Cookbook! Do you know it?”

Sort of. I knew that The Moosewood Cookbook was from Ithaca, New York – a city about 2 hours from here. That was all I really knew of it though, I’d never looked through it or had even seen it for that matter. I told my Cauliflower Sister that I would look for the recipe online and thanked her for the idea.

I’d almost forgotten about this conversation until this afternoon. Today while visiting a girlfriend and perusing her collection of cookbooks, I spotted The Moosewood Cookbook! The cauliflower conversation came flooding back as I snagged the book off the shelf. I flipped to the index and sure enough, there it was! Cauliflower Cheese Pie.

And my inspiration for tonight’s dinner was born.

Cauliflower Cheese Pie Recipe

It turns out that all the recipes in The Moosewood Cookbook are vegetarian! I had no idea! It was originally written in 1977 and is based on the cuisine of The Moosewood Restaurant in Ithaca.

While all the recipes are vegetarian, most of the recipes contain large quantities of cheese, eggs, milk and butter. I took the original Cauliflower Cheese Pie recipe and made some tweaks to make it slightly healthier and a little lower in fat and calories.

Here’s my adapated version of the Moosewood Cauliflower Pie Recipe that I made tonight.

Crust:

1 large sweet potato, peeled (optional) and shredded. (I swapped out white potato.)
1 egg, beaten
1 small onion, shredded

Pre-heat oven to 400 F. Add shredded potato and onion to beaten egg, stir well to combine. Grease 9 inch pie pan and form potato mixture into crust. Bake crust for 40 minutes.

Raw Sweet Potato Crust

Filling:

4 – 5 oz shredded cheese
1 medium cauliflower, cut into small florets
2 cups of spinach, trimmed and washed
1 glove of garlic, minced
1 small onion, diced
1 Tbsp extra virgin olive oil
1/2 cup vegetable broth
2 eggs
1/4 milk (I used plain, unsweetened almond milk)
thyme, basil, paprika

In my version, I swapped out 3 tablespoons of butter for 1 Tablespoon of olive oil and a half cup of vegetable broth. Add olive oil, diced onion and minced garlic into a pan and sautee until soft. Add herbs and spices to mixture and stir well until veggies are well coated.

Add broth and cauliflower to pan and cover, cooking for about 10 minutes. Add spinach to pan and cook for 5 minutes. The original recipe didn’t call for spinach but I wanted a little bit of green in this pie!

The spinach reduces down to almost nothing when cooked so don’t be shy throwing a couple handfuls in.

In a separate bowl beat two eggs and add milk, set aside.

When the crust is ready, remove from oven and reduce oven temperature to 375 F.

Baked Sweet Potato Crust

Layer half of the cheddar cheese on the bottom of the cooked crust.

Mild Chedder Cheese Layer

Top with cauliflower/spinach mixture.

Cauliflower and Spinach Filling

Sprinkle remaining cheese on top of veggies and finally pour egg/milk mixture over the entire pie.

Bake pie at 375 for about 35 minutes.

My math tells me this entire pie contained 1302 calories. Cut into 6 slices, 217 calories per slice. I expected it to be much more so this was a pleasant surprise.

I thumbed through Moosewood Cookbook while the pie was baking and I can’t wait to try more the recipes in this book, so many great ideas! I snagged another book from my friend Tara’s house when I was there too, oh boy I’m gonna be busy.

When the Garmin Strikes Midnight

One more run with my borrowed Garmin 405 this morning before it turns back into a pumpkin. Well, maybe not a pumpkin exactly but they will charge my debit card $350 if I don’t bring it back today. I don’t know about you but that’s more than I want to spend on a pumpkin.

Tuesday Morning Garmin Run

A frosty 27 degrees this morning but with running tights, turtle neck, light jacket, gloves and a hat that I knit myself I was warmed up and comfortable by the first half mile.

4.5 miles this morning in just under 40 minutes. The chill this morning made me crave something warm for breakfast but I was in the mood for something other than oatmeal.

How about Quinoa for breakfast then?

Quarter Cup of Quinoa

1/4 c quinoa, rinsed and drained
1/2 c unsweetened chocolate almond milk
1/2 Tbsp cocoa powder
1/2 Banana, thinly sliced

After I rinsed the bitter saponins away I added all quinoa, chocolate almond milk and cocoa powder to a small pan and cooked on medium high, stirring until the cocoa powder dissolved. The choice to go with chocolate was by default, as I only had chocolate almond milk on hand. And if I’m using chocolate almond milk, you can bet your quinoa buttons I’m adding a little cocoa powder too.

Once mixture begins to a boil, cover and reduce to a simmer. I added half of a thinly sliced banana to naturally sweeten the deal.

Stirring occasionally to help the bananas completely dissolve.

I let it simmer for about 10 minutes and then transferred my sweet brown pile to a bowl.

Topped with the other half of my banana and another little brown pile, errr… I mean, 1 Tbsp of almond butter.

This was very different but still very good! Quinoa is naturally nutty so the almond butter and banana were nice compliments – the chocolate worked out great too! I especially liked the slight crunchy of the quinoa, not to mention the natural protein kick in the pants too.

Now it’s time to pack up the Garmin and get it ready to return this afternoon. Goodbye Prince Garmin! It’s been fun.

Greetings From the South Pole

I swapped my early morning work out today for a little early morning de-cluttering/getting-ready-to-pack-up-this-entire-house-and-move-our-worldly-possessions-25-minutes-east-of-here instead.

La de da just taking stuff we don’t use any more to drop off and donate! Don’t mind me!

Wait a minute. Not so fast. Have you ever tried to donate or get rid of something with your children around? Be it their old toys or your own kitchen and household items? Trying to move stuff OUT when you have curious creatures wanting to know what they are missing out on or are being robbed of makes this a very delicate operation. This should only be attempted in the wee hours of the morning when no one is around to protest the donation of old toys. Old toys that are haphazardly thrown from toy bins directly to the floor while in search of the toys they actually play with.

In all fairness, last week I tried to get them do this with me; explaining that they have lots of toys.

Why don’t we pick out the toys that you no longer play with and give them to children who need them?

This is a perfectly reasonable request, wouldn’t you say?

Have you ever tried to explain to a shark that he’s really not that hungry and your bloody stump isn’t as good at the old boot you saw floating just off shore a mile back?

But I digress.

Suggested Toy Donations turned Treasured Possessions were of course cast aside within minutes in favor of the empty paper towel roll and lone sock with a hole in it named Fred.

So I guess I’ve got no choice but to go undercover.

I am like the opposite of Santa Claus. Instead of delivering toys to children while they are sleeping, I take them away. Naughty or Nice, Mama Claus doesn’t care. MC just wants to move with fewer items in the Toy Shop than she has right now.

My sneaky unSanta karma caught up with me shortly after taking that picture because I soon realized my camera was no where to be found.

Wouldn’t it be just my luck that I mindlessly set it one of the boxes I went back out with later to shove under the blanket? That would just be too perfect.

But alas, my story isn’t that ironic. After 20 minutes I finally located my dear Canon in the remote corner of the basement where I had been recklessly throwing toys into a bags like the Grinch Robin Hood.

With the exception of the rind, I ate all the parts of the pineapple that are missing here. Sorry camera, I couldn’t wait.

So where were we off to on this fine day? Why the dentist of course! Ava was first in the chair. Well, actually mommy went first but no one offered to take MY picture while I got my teeth cleaned. Sometimes I just get sick of asking.

Today’s appointment was special and in my mind deemed blog worthy because it was Maxine’s maiden voyage in The Fun Chair. A little look-see teeth counting and warm up so she won’t suspect the robotic restraints that come up out of the arm rests next time around.

48 teeth cleaned (28 of mine, 20 of Ava’s), 20 teeth counted, one loose tooth (not me) and no cavities (for all). Best of all, no sheets were prematurely torn off any boxes full of toys. I call today’s trip a rousing success.

I’ve got a meeting scheduled for this evening, so my clueless philanthropists were dropped off at Aunt Ellen’s house for the afternoon before I revealed to Goodwill what was behind the curtain. With a belly that shakes like bowl full of veggies, I shouted Oh! Oh! Oh! as I drove out of site.

A child-free, good will toward men, leftover lunch was in store for me today. The last of the curried lentil and squash soup with my favorite vegeta-ful sandwich on toasted Ezekiel.

Do Over

I felt much better this morning after my some green juice and a family walk to the playground. I definitely was up for a trail run when Shawn, my running partner in crime, showed up and we headed out to a large park just down the road to hit the trails.

I need a do over of this picture because it would be much more interesting if me and/or Shawn were in this shot – but alas, I didn’t think about that until I was home, photo op lost.

Three Signs

BLAH, I’ve got a food hangover this morning. There are three tell-tale signs that I over did it last night.

1. I woke up feeling less than stellar
2. I was not at all interested in breakfast when I woke up
3. I did not care to know what the scale had to say this morning

I know that I felt free as a bird to eat whatever I wanted and more than I usually would because I ran 9 miles yesterday. It’s like my long run was my ticket to over indulging. Is that really the reason I run long? So I can eat whatever I want? NO it is NOT. I wasn’t overly hungry last night, I just felt like I had permission to eat whatever and as much as I wanted because I ran so far yesterday. That cake came home with us last night and I did NOT need another piece before bed. What the hell was I thinking?

Well, I’m paying for it this morning. Lesson learned. A lesson I thought I’d already learned but I guess I was due for a refresher course. Finding a balance with exercise, eating, maintaining my weight (and ideally – losing these last 10) is work in progress and oh yes, I am still in progress – that’s all I can say. Onward and upward. Today is a new day.

Juice was most definitely on the agenda for this morning when I finally felt ready for something.

Come on romaine, do your green thing.

Hoping my glass of green goodness detoxes too much ultimate white cake from every cell in my body. Well, every cell except my brain cells so I don’t forget about how I’m feeling this morning.

We’ve got a beautiful day in store for us here today. I’ve got plans to meet up with a friend for a little trail run early this afternoon. Green juice and fresh air make everything better.

Avert Your Eyes

Children with Granny, the man off with some friends, I had the joy of making lunch in total peace and quiet this afternoon.

And I had a hankering for a veggie burger.

1/4 c ground flax seed
3 Tbsp bone suckin’ bbq sauce

When I was getting out veggies for burger toppings, I spotted some mushrooms hiding in the back of the fridge. Into the burger mix they went.

I had a little lunch date with a certain boyfriend, we had a few things to go over.

My quiet afternoon wore on and soon we had to run off and fetch our children from my mom’s house. And eat dinner there too. How convenient.

A Nice and Easy 9

Having started last Saturday with a fast 7 miles, I decided this Saturday would be another long run – but this one at a comfortable pace and maybe a little further. Matt’s post on Stu Mittleman got me revved up for an enjoyable long run and today was the day.

I wasn’t sure exactly how far I was going to go this morning, and decided to play it by ear. First things first though, a MamaBite while loading the dishwasher multi-tasking.

Pre Run Banana Bite

My plan was to maintain a nice easy pace and to just get out there and enjoy myself for a nice long Saturday run. With my borrowed Garmin strapped wrist, I ventured off my usual long run route and ran through a park, a cemetery and various neighborhood streets I wouldn’t otherwise explore, a just let the distance be whatever it was going to be.

I kept an eye on my watch and saw my pace was hanging out between 8:40 – 8:50. As I neared home, I decided to finish strong and picked up the pace for the final mile. Maybe I should have titled this post A Nice and Easy 8 with a Fast 1.

9 miles, 1 hour and 17 minutes later, time to whip out a few of my favorite things.

These are a few of my favorite things

This is my latest mid-morning snack favorite. Two slices of toasted cinnamon raisin Ezekiel bread, 1 tbsp of almond butter topped with sliced banana. I’ve eaten this concoction many times before but it had sort of fallen off the radar for a while. (Thank you Holly for this reminder!)

And my most favorite thing of all? Almond butter in bulk! 4.99 a pound, baby!

Calorie counting saves you money? It saves me money at least! Now that I’m eating less almond butter I haven’t been spending a fortune re-stocking my fridge with it every other day! Who knew?
