The secret to healthy eating is making it taste good! There’s so much you can do with whole foods to make delicious meals and snacks with a reasonable amount of calories. Here are some of the dishes that make their way through my kitchen, either occasionally or on a regular basis!

    I’ve been having such a hard time getting my son to eat vegetables. i figured i would try making a pumpkin pie without the shell… or condensed milk. because… why…. anyway. i’m trying a different approach. i think his aversion is tied with sensory issues (not autistic. just sensory with food). so i’m trying to let go of the urge to make him eat his vegetables. its been hard. but a couple days ago… we made pizza.. and he put sauce on it for the first time. so thats a win! the other day, he had pears (with no skin on) and that was also a win. I’m trying to look at the little victories instead of the “how many servings did you eat today” approach i had been trying before. i used to make crustless pie a lot in college. i forget how i did it. i don’t think i even added milk. so i’m trying it with half the milk suggested to see how it turns out. (i have no issue with milk. just that my son gets enough dairy without me having to add it in extra to anything…. plus… it saves money to not have to add as many ingredients. whatever. ramble done.
