Lunch Lately

Today I’m here with a couple of my recent lunch time regulars.

Some days I eat lunch all by myself. When the big kids are at an afternoon class and the baby is napping, I get to eat late lunch in peace and quiet with just myself and maybe a literary friend too. I’m re-reading (/ skimming) The Primal Blueprint – I’m finding it more relevant now that I’m eating meat again.

Turkey Burger Lunch

A turkey burger with provolone on top of greens, shredded carrot and celery tossed in olive oil and balsamic. I am now one of those people who eats their burger without a bun. Some of the time, anyway.

And while there are some days when I eat lunch alone, most days I’ve got company in the kitchen.

Another lunch time favorite right now is a cheese omelet with a side of steamed broccoli. If I’ve got broccoli washed, trimmed and ready to go, this lunch comes together quickly.

Nothing fancy, but very satisfying – especially when you cook your eggs in a little butter.

Kaz often sits in my lap during lunch, and I’ve recently been letting him taste some of the vegetables off my plate. Except “tasting” quickly evolved into full fledged eating, this boy is into food. This boy is into BROCCOLI!

It goes a little something like this (hit it!)

(We’re running with Baby Led Weaning – no purees, no spoon feeding, giving him more control – I’m liking it!)

Current lunch fav #3 is a delectable tuna salad with a side of fresh crudités.

(You said crudité with a French accent, right?)

Vegetable Sticks

If I remember, I cut up extra veggies to have on hand for snacking or for lunch the next day.

Half a can of albacore tuna,

combined with half an avocado, a little Dijon mustard with S&P to make tuna salad.

(P.S., Avocado is great in egg salad too! And if you’re wondering about the safety of your seafood, I like the Seafood Watch Program at Monterey Bay Aquarium as a resource.)

This is a good option for eating while standing and/or running around trying to get girlies out the door on time and/or picking up plastic dishes off the floor.

    Yum! Good looking lunch. We’re loosely doing a baby led weaning with our baby too. Although it was his idea! He let me know when he continued to refuse the homemade puréed food and go straight for my plate.

    Mmmmm….I love lunches like this. And I’m definitely one of those people who eats the burgers without the buns! It’s funny—now I prefer meat on a salad rather than wishing I could have a bread-y thing.
    Oh, and I’ll take Kaz off your hands anytime :-)

    Funny you mention avocado. I’ve recently been glaring at my very large jar of CANOLA mayo as I’ve been making egg salad and wondering I could sub avocado. Dang you Deep Nutrition! I haven’t even read the book and I feel like it’s got mind control over me :)

    Hey hey, it’s appreciate each other’s reading list day! I really love Mark Sisson’s PB and I hope you like it. Let me know what you think, especially about how he tries to integrate “primal” living into everyday life, not just the biggies like diet and exercise. Also, have you seen his wife? Very hot. I’d like to be them when I grow up.
