We Called in Sick

We didn’t have anything official on the agenda today, so we didn’t really call in sick. But we’ve been goofing around today for sure. Stay at home mom’s and homeschooled kids get a day off once in a while too, right?

Right.

We had breakfast together, we got dressed and then we went about our business.

The girls set up shop in the upstairs foyer.

I found Barbie hanging from the register in the kitchen. When I asked no one in particular what this was all about,

Maxine responded, “So I know where she is.”

Fair enough.

I also made this guy.

Egg Quesadilla

I saw Jenna from Eat Live Run make a breakfast quesadilla last week and I made them for dinner on Monday.

Then I made one for lunch on Tuesday.

And another one for lunch on Wednesday.  (As in, today.)

Three breakfast quesadillas in three days, that’s right. And not for breakfast.

Three breakfast quesadillas in three days. I hope that tells you something.

(that should tell you that these are good. really good.)

Saute up some spinach, scramble a couple eggs, shred a little cheese.

Throw in more vegetables if you’re up for it! Stick with just spinach if you called in sick today.

Once your eggs are cooked, move them out of the pan and move in a little butter and tortilla.

Breakfast Quesadillas

Or get a whole new frying pan out if you’re in the mood to wash two pans. I called in sick today, so I’m only in the mood to wash one pan.

Wait a minute… what am I saying?  I’m not in the mood to wash any pans.

Fold in half, grill a bit on each side until it looks nice and toasted and your cheese has melted.

Cut in half and serve with salsa,

and then prepare to wipe the tears from your eyes once it’s gone.

Don’t cry, it’s ok. You can make another again one tomorrow. I probably will too.

    I’d really love to tap into the thought process of our kids because sometimes I think they are genius and sometimes I think it’s insanity.

    JJ put his ice cream cone in the hole on top of one of my small watering cans once and I scratched my head.
    I asked him why he put it there of all places and he just looked at me like DUH MOM…. ” so I can pway wif my toys Mama….:

    to them it’s as simple as the day is short (or long).

    it cracks me up!

    oh and can I have a quesedilla?

    That looks so great. We often do eggs in a wrap with similar ingredients but I hadn’t thought to make it into a quesadilla. Oh, and love the Barbie – too funny!
