Leftover Lentil Burger Leftovers

A great way beat the leftover blues is to create something new and different with your uneaten foodstuffs from a previous meal.

Thanks to a big scoop of rolled oats, lentil tacos from Sunday were turned into lentil burgers last night.

Lentil Tacos Turned Lentil Burgers

With oats stirred in to the last of the lentil taco filling and then given a few minutes to sit, they’ll very generously soak up the sauce and thicken up. It’s then easy to form the mixture into patties with your hands.

Cooked in a lightly oiled pan for about 15 – 18 minutes, flipped a couple of times.

These were made yesterday – which then makes them leftovers today, right? Then I guess that makes these lentil burgers leftover leftovers.

The lentil burger was reheated in the toaster oven while the Ezekiel bun toasted. Leftover lunch time burger toppings included mustard, pickle, tomato, lettuce and the remnants of a beat up avocado.

    Way to use up leftovers creatively!

    I always end up smashing my veggie burgers and they always come out of the sides of whatever bread-like item I’m using, so I decided to say screw it and I just eat them open face now.

    Also, do you find that your Misto sprays in more of a stream than a spray after owning it for a while? I’ve done everything the internet has said to fix the problem and mine isn’t quite back to the out-of-the-box spray quality. 😛

    • Yeah, my misto does do that “stream” thing from time to time, but it usually self corrects after a few seconds of spraying/streaming so I’ve never looked into it around the interwebs. I’m curious as to what solutions you’ve tried?

      Extra pumps seem to help when it does that… I always spin the top of it around so it’s snug against bottle when I’m done. I also only fill it 1/3 of the way full each time… I wonder if those things help? I’ve had mine for a couple years now and I’d say it works like I expect it to 95% of time.

      And no, that’s store bought lettuce – we’ve already blown through the CSA lettuce from last week and all the greens from the garden have been harvested. Tomatoes and string beans are now growing in their place!
