Did you know there are lots of ways to cook beets?
Well, of course you did!
Did you know you can wrap them foil and roast them at 400 degrees for about an hour?
Daniel knows! And I’m so glad he told me. It’s super easy.
I scrubbed up a few and then shaved off their hairy, scary bits before wrapping them in foil.
Into the oven – one, two three –
when you can stick a fork in them, they’re done you see.
Did you know it’s easier to peel your beets after you cook them?

That’s true too. Sliced and sauteed in real butter.

Well at this point I certainly hope so! There was green leaf in this one as well.

Salad topped with hemp seeds for some protein. (Plus a bunch of un-pictured carrot swipes through the Sabra while I tended to summer veggies.)

Ah, yea, the skins peel right off! I like how my whole family, no matter how many times we have beets, still tries to peel them as soon as they come out of the oven – myself included. I steamed my batch of beets and while I like them better roasted, I find that they’re still sweet and taste fantastic in salads, plus it only took 10 minutes instead of the usual 40-60. 😀
Yes, steaming them is faster – roasting them was easier though! Would be good when you’re already baking something else and the oven is hot and dinner is going to be a while anyway… thanks again for the tip!
I had beets as a kid and did not like them at all. Why??? Beets me. (haha) Couldn’t resist.
They were on a salad bar and maybe they were pickled, I don’t know but I’ve steered away from them ever since.
Where do you buy your hemp seeds? Those are really good for you and you don’t have to grind them like the flax seed. But you know that already.
I find them in the cooler case at the small, hippie grocery stores here. If you have a Trader Joe’s or Whole Foods nearby, check there!
Hemp seeds are good – I really enjoy their taste!
