Never does the second to last letter of the alphabet look as good as it does on a cold and rainy Friday morning.

I find it a tad ironic that I hit the Y to avoid getting cold and wet, only to go inside and get cold and wet.

Actually, the Y is pretty warm which makes swimming much more enjoyable compared old, cold, damp and dreary place I use to swim laps in the old ‘hood.  Today was my first early morning swim session this season and it was easy to jump right in and get moving.

My classic pool workout is 100 yards freestyle, 100 yards backstroke (do your flip turns!) then 50 yards with the kick board. Repeat for 6 sets. (1 length of the pool = 25 yards.)

Cool down 25 free, 25 back x 6. 40 minutes later and I’m on my way home to see the man off to work.

The best part about swimming is the voracious hunger that hits out of no where by the time you get home. A hunger wouldn’t be as welcome if you weren’t totally looking forward to breakfast.

And looking forward to breakfast I was.  My new breakfast staple: Artisana Coconut Butter

Artisana Organic Coconut Butter

Coconut butter is old news to the food bloggers of the world, but it is new to me and I. Am. In. Love.

A tablespoon shaved into a ramekin, microwaved for 10 seconds, swirled, another 10 secs, swirled, 10 more secs if needed.

Before –> Melted

You gotta swirl it between 10 second microwave sets otherwise you’ll scald it.

Drizzled over my new fav overnight oats combo.

Blueberry Coconut Overnight Oats

1/2 c rolled oats
1/4 c 2% Chobani Greek Yogurt
1/2 c unsweetened almond milk

Soaked in the fridge overnight.

Topped this morning with:

1/2 c frozen (thawed) blueberries
1 Tbsp Almond Butter
1 Tbsp coconut butter

(465 calories, 25 g of fat, 48 carbs, 14 g protein) Numbers might seem a little scary, but this easily holds me over ALL morning. Don’t forget that fat is your friend people!

Swim done, kids still snoozing. Time for breakfast at the office. I mean, with The Office.
