The girls were with Aunt Ellen today while I got some work done around the house. I managed to sneak in 45 minutes of Runner’s Yoga before I left to pick them up with plans to run some errands on the way home.
We were out longer than I expected. By the time we got back some of us were pretty cranky. Some of us were pretty hungry too. And some of us were all of the above.
I had nothing planned for dinner. What else is new. After a quick scan of the produce drawer I pulled out a green pepper, mushrooms, onions and tofu and got to work.
Veggies were chopped into large pieces and then sauteed in some olive oil and veggie broth until they softened up.
I rummaged the spice cupboard for cumin, chili powder, oregano and red pepper flakes to add to the mix.
Once the vegetables were nearly done I added 1/2 a block of extra firm tofu, sliced into thin strips. At the last minute I threw in some jarred jalapenos and stirred gently so the tofu pieces wouldn’t break up too much.
20 minutes after walking in the door, veggie fajitas were hot and ready. It’s about time! I’m cranky! And hungry!
Into a warm whole wheat tortilla with a little salsa. x2.
This meal was fast and filling and totally worth the salsa stain on my shirt.
Not only do I cook fast, but I eat fast too. Now if I could just do laundry fast I’d be all set.

I made something like this a few weeks back…I think I called them Ginger Lime Portobella fajitas or something to that effect. For a homemade vegan mayo/dressing/dip for them, take some mayo or VEganaise, like 1/4 c, 2 Tbsp lime juice, 1 Tsp or to taste of cumin, pinch of chili powder,hot pepper flakes, something like that if you like spicy, whisk, and it’s like your own little mexican sauce, vegan style. Just think, “spicy sour cream” in your mind while you’re eating it. It aint sour cream, but it’s good!

Aww…boo to salsa stains! I never fail to make a mess of myself while cooking and eating. It’s just inevitable. 😀

What do you do with your kids during the 20 minutes you were making fajitas? When we have evenings like that where we’re all starving and cranky and stayed out longer than planned, I usually end up giving them pb&j, oatmeal, or banana/berries. Leftovers if we have them. A spoonful of peanut butter if they’re extra cranky. And do they eat veggie fajitas? Mine are 5 and 2 and at this point would probably just eat the tortilla, but maybe not even that. I keep offering and I know at some point they’ll eat a wider variety but now, not so much. Just curious if you have some vegetable-eating kids tricks. And waiting-patiently-while-you-make-dinner-,-not-hanging-on-your-leg-and-whining tricks.
By the time we get in the house they are usually side tracked with playing – at least that was how it worked out that particular night. Usually they can be held over with some cheese or crackers – or just like you said, a pb&b or apples/bananas… yogurt, anything like that.
No, my kids definitely don’t eat veggie fajitas, I wish! Yes, they’ll eat the tortillas, quesadillas are a kid-favorite meal around here. Especially with plain greek yogurt for dipping. No real vegetable eating tricks here except to just keep offering and leading by example. I do believe that one day they’ll be more open for more veggies. I know that’s how I was as a kid and watching my parents eat vegetables of all kinds definitely impacted me. My gang will eat corn, peas, beans – Ava will eat cucumbers, carrots and red pepper. That’s really about it.
Ava is also starting to be more influenced by her peers and seeing her friends readily eating vegetables seems to have an impact on her – veggie peer pressure! I’m all for it!
