Avert Your Eyes

Children with Granny, the man off with some friends, I had the joy of making lunch in total peace and quiet this afternoon.

And I had a hankering for a veggie burger.

Veggie Burger Mash

1 can of black beans, rinsed, drained and mashed
1/4 c ground flax seed
3 Tbsp bone suckin’ bbq sauce

When I was getting out veggies for burger toppings, I spotted some mushrooms hiding in the back of the fridge. Into the burger mix they went.

Shhhhh, listen? Do you hear that? Just a quiet burger sizzle and a gentle bubble of my veggies steaming.

Cooking

I had a little lunch date with a certain boyfriend, we had a few things to go over.

Lunch is Served

Brendan approves. Mostly. The Bone Suckin’ Sauce is pretty innocent but with his glasses on I can’t tell if he’s giving me the evil eye over that one or not.

On an Ezekiel roll with mustard, sliced dill pickle, red leaf lettuce and a side of steamed broccoli and cauliflower drizzled with another tablespoon or so of bbq sauce, just because.

Lunch Date

The veggie burger mix make 3 nice sized patties, about 170 calories per patty.

My quiet afternoon wore on and soon we had to run off and fetch our children from my mom’s house. And eat dinner there too. How convenient.

After dinner, there was trouble brewing. Ultimate White Cake from the Wegmans bakery kind of trouble.

    Wow that was a delicious looking dinner your mom made! Did she make that cake?? I can never get my frosting to look nice and tidy like that! Sounds like you had a nice peaceful day with no kiddos and no hubs… it’s always nice to have those. You don’t realize how much noise comes along with kids until they’re not there!

    I am addicted to those food should taste good chips…The Works and the sweet potato one. I think I have to stop buying them!

    Wow, that dinner looks delish. You mom is so gourmet.

    You veggie burgers look good and easy to make…did you cook the other 2 patties, then freeze them, or freeze them uncooked? I have made veggie burgers before and cooked them then froze them and when I went to eat the last one it was stale and hard as a rock. I had to chuck it.

      I keep the left over burger mash in the fridge and then shape them into patties right before eating. I said it made three patties but I only made one, and I know there’s enough left to make two more.

    What a yummy looking dinner. I’ve never heard of Moong Dahl before. Is it a type of pasta? I would have definitely found a home for that cake,too. (haha) Sounds like the perfect day!:)

    i need to learn to make my own veggie burgers like yours, i love them so much but seem to be one of those lazy kinds and always just buys them! i’m going to write down this recipe and just do it! :)

    Oooo I love dahl! I really need to make it soon. I think I’m also going to try to make some homemade almond butter today – will let you know how it turns out!

    That cake looks divine. I especially love how Ava is chillin out, maxin, relaxing at the table, eating her cake. No bigs.

    Too funny Alison. I don’t know how you come up with this stuff – covering Brendan’s eyes! But man does that cake look good….
    The burger looks fab too. I’ve yet to try making my own veggie burger but even this sounds like something I could easily make.
