Over the River and Through the Woods

My hesitance to work out yesterday was my cue that it’s time for a rest day – so today’s the day. We’ve got another beautiful day in store for us and we’ll be outside and active for sure so it’s the perfect day to take a break.

Instead of getting my sneakers on, I turned the oven on.

Oven On

I. Must. Have. More. Squash. And. Apple. Curried. Soup.

Seriously. This is soup was so good – I had to make more. Today I used an acorn squash instead of a buttercup, and roasted a sweet potato again to go along with it. The girls and I are off to visit Great Granny today and I want to bring some of this soup to share for lunch.

What’s better than running 4 miles first thing in the morning? Making a big old mess in your kitchen.

Kitchen Mess

Whooo boy might as well get the blender out while I’m at it! Go big or go home when it comes to messes, that’s my motto. I got that one from the girls.

Zak’s mind reading Aunt Pat commented yesterday about making a coconut mango smoothie and little did she know that’s exactly what I had planned for this morning!

My young coconut meat (hubba hubba) from Saturday and the other half of my mango from yesterday. 2 Tbsp of ground flax seed and 1 cup of unsweetened vanilla hemp milk.

Plus the un-pictured remainder that wouldn’t fit in the glass and I drank straight from the blender before taking the picture you see above. I’m so classy.

And now to grandmother’s house we go! (ACK I never hit publish this morning on this one!)

    Me too… I was starting to get worried.

    Funny that you made another batch of your soup, that’s exactly what I did this weekend, I was having pumpkin soup on the brain…this time I made the whole recipe and froze some!

    Rest days feel so good sometimes :) Hope great granny enjoyed the soup! It seriously sounds so delicious. I’m actually making a big ole pot of soup as we speak! Vegan asparagus….I’m a little nervous about how its going to turn out.

    Now I have hemp milk AND I had a Chocolate Almond Smoothie for breakfast and I am plotting and planning my next jog!
