Another Tuesday, another glass of green goodness. Today’s green juice was pretty typical. Romaine, cucumber, lemon, ginger, with the addition of a red bell pepper and some spinach. The orange-ish tint at the top of the glass was sponsored by the red pepper.
Zak wanted to swim laps this morning so I stayed home with snoozing children and enjoyed a “rest day” while I folded and put away laundry, tidied up and swept and mopped the kitchen floor. I think I feel equally satisfied with my clean floor as I would have if I’d run 5 miles this morning.
I found mangoes on sale yesterday and grabbed one to be the star of fruit cereal this morning!
I didn’t realize until it was too late (read: sliced into) that this mango wasn’t perfectly ripe. I don’t eat them enough to know exactly what a ripe mango is supposed to look like and feel like. But it was still sweet and the crunch ended up working perfectly for fruit cereal this morning.
Diced mango slices, diced banana, tossed in 1/4 c or so of ground flax seed, topped with a tablespoon of unsweetened shredded coconut, sliced almonds and a nice pour of unsweetened vanilla Living Harvest hemp milk.
A totally tropical breakfast on a cold fall morning in upstate New York. I’m going to continue with my tropical theme in just a moment by making it very hot and humid in my bathroom. That sounds a little strange but really it’s just a more interesting way to say I’m about to take a shower.
Did you happen to notice that my mango and my juice sort of match? I did that on purpose of course.
i love how juices end up kind of layered like that – so pretty!
i LOVE mango but the oil in the skin makes my lips peel…odd and interesting fact!
I do eat them when they are in season and ripe! I love mine with cottage cheese…don’t ask me why!
Did you like the pepper taste in your juice? I did that once! it was good but not the direction of the flavor I wanted…never did it again!
hahaha
it WAS a pretty juice though!
i pick my mangos like avocados…soft to the touch but still firm…and a little more red/yellow!
perfect-o!
xo
Cindy, does that mean you eat your mangoes with the peel ON? I’ve never done that! Something to try!
NO!!! but I used to eat the flesh off the peel…no good.
but now if I eat too much, my skin gets peely.
Sorry! didn’t mean to make it sound like I eat the skin.
agreed. cleaning can be JUST AS satisfying as a sweaty run.
haha oooooh hot and humid? Hmmm sounds like a fun time ๐
Hi Alison! Love the tropical breakfast on a cold morning! I’m going to try fruit ‘cereal’ one of these days, it looks GREAT!
Mango is my FAVORITE! Love it, love it!
Have a great day!
ooo I loveee mangoes but they are so expensive right now where I live…I can’t wait for them to randomly be on sale for like 50 cents each, so I can grab 20 of them…you have such creative ideas for meals that I never would think of!
You should definitely try the mango again when they are a dark green/red color. They are SUPER juicy and delicious!!!

My MIL had two huge Alphonso mango trees in her backyard for years and every Feb/March she would give out bags full to family and friends. Everything she ate had mango in it for months. (haha) Unfortunately, a hurricane came along a couple of years ago and knocked both of them down. They are missed, that’s for sure.
I hope you have a very enjoyable rest day!!! Love the “sponsored” red pepper in the juice! ๐

I’ve never tried eating a mango from the store because I can never tell when they are ripe either! But the fruit cereal still looks amazing!
Great color of the morning juice!
Cleaning as satisfying as a run? I guess I don’t clean thoroughly enough… ๐
Love your tropical breakfast!
I need to get more adventurous with my green juices. I am such a creature of habit and love my green lemonade so much I don’t want to be disappointed in something new. I am back and forth on mangoes. I kind of wish I liked them more!
I hear that! I totally didn’t want to venture away from my green lemonade – but a little experimenting this week has been fun!
I love mangoes! But boy I hate when they’re not ripe, the weird texture then creeps me out.
I’ve never tried it in cereal but it sounds and looks really good. Usually I just stick to smoothies.
Question: do you peel it, then cut it, or cut it, then scoop it out?
I peel it and cut it! With the big weird seed in the middle that’s really the only way I’ve been able to do it!
I need a mango. Yumm!
i’ve never been a huge fan of mango, i think the only reason is that it takes forever to peal and then half the time i feel like i never get anything from it! But it sure does taste good!
