The Quest for the Perfect Veggie Burger

Today we did nothing but stay home most of the day and play catch up. I wore my stay at home mom uniform all day: t-shirt, hoodie, sweat pants, no bra. I swapped out my sweat pants for jeans when we ran Ava to dance class and got a few groceries late this afternoon – still no bra, thank you hoodie. You’ll be glad to know I’m back in my uniform once again.

I’ve been in search of the perfect homemade veggie burger recipe for a while now. The black bean burgers I make are quick, easy and tasty, but they aren’t perfect. They are pretty mushy and need a little more structure.

I got a little closer to veggie burger perfection with another version of black bean burgers, made with sun dried tomatoes and sunflower seeds, but they were still a little too soft. Better, but not perfect. Those lost points in the ease department.

I’m not going to take this challenge lying down. Today I studied a few more recipes and came up with something new, something different. A recipe involving everyone’s favorite pseudo grain – quinoa!

Quinoa

1 cup of dry quinoa, cooked according to package directions. (1 cup of quinoa + 2 cups of water, cooked for about 10 – 15 minutes)
1 15 oz can of cannellini beans
3/4 cup ground flax seed
1/2 cup sunflower seeds
1 – 2 cloves of garlic
dash of kosher salt

Once quinoa is ready, add all ingredients into the food processor and process until well combined.

This worked very well. It stuck together well without being too sticky in my hands, like my bean burgers always are. It held together perfectly and I love the taste the quinoa gave it. In my mind the food processor is “easy”, but still not as easy as mashed beans with a fork. Actually, you probably could mash the quinoa in with the beans and stir everything else in… at the very least it would make for a good arm workout.

When I started working on the veggie burgers, I also preheated the oven to 350 for some kale chip action.

Misto‘d with olive oil and sprinkled with nutritional yeast. I usually use parm but thought I’d try the nooch tonight.

My quinoa burger was cooked in a lightly sprayed frying pan and cooked for about 5 – 8 minutes on each side. Served on an Ezekiel roll with mustard, dill pickle, lettuce and tomato. And oh yeah, a huge pile of kale chips.

All things considered this was a great burger! It tasted pretty neutral and could have used more seasoning of some sort, but I was experimenting and didn’t want to mess with too many variables. It had a nice consistency, wasn’t too sticky but wasn’t too dry either. Quinoa really is a wonder seed! This recipe made five good sized patties, I probably could have squeaked out a sixth had been a little more frugal with the first two patties.

So I don’t think I’ve nailed the perfect homemade veggie recipe just yet, but I’m getting there!

    I love that 7th grade flashback!! Yesterday thru my kitchen window I could hear my 9 year old daughter helping my dad clean out his garage (I live next door to my parents…) and I had quiet a few laughs listening to them ooohing and aaahing over found treasures that ranged from old christmas ornaments to high school pictures of me and my sister to his Peter Frampton ALBUM collection!! It was a wonderful way to spend an afternoon….evesdropping!

  • You have just detailed why I dont make veggie burgers. My 1st and 2nd attempts used 2 kinds of beans, almonds, walnuts, sunflower & flax seeds, and not to be cheap…but…I had quite a bit of $ ingredients involved. Which is fine. If 1. you like burgers (Im vegan and dont care) or 2. the homemade version was just amazing (mine weren’t). So I gave up. I give you major props for still trying! HEABS posted an artichoke heart & sunflower (I think) seed burger (storebought) today. And the day before I was on another blog talking about veggie burgers. I just dont care enough to keep trying. I really give you props b/c they are a hard thing to tackle. Ani’s cookbook has tons of variations BTW. I gloss over b/c of my apathy :)

    Anyway the kale chips and nooch…right on. Next time, soak some cashews, grind + red pepper = your kale chip topping. Uhhhhh huhhh good. Bagged kale. I guess I have never checked really but i have never seen that. What a find!!

    I’ve been meaning to try out veggie burgers. Those looks like pretty good ones. Maybe I’ll wait until you have it perfected! :) And your stay at home mom attire is the same as my chill out grad student attire. I’ve never been able to brave grocery shopping sans bra, but don’t put it past me just yet. And your girls are too cute! I remember telling my brother at that age I’d be “best his friend” if he gave me his dessert. Didn’t work.

  • So it seems I’m wearing the same mom uniform as you right now. The only problem is, I’m not a mom. I guess it can be the part time student, works full time, the mail man should be happy I even have pants on uniform too.

    Anyway those burgs sound perfect, because like yours my black bean burgers are squishy and unstructured as well. But they taste SENSATIONAL.

    I am going to experiment with this quinoa concept though.

    haha….omg…that is definitely a 7th grade flashback! Where does she come up with those things?

    We have a few of those thermal recyclable bags, too, and they are my favorite! Some times I’ll use them even if I’m not buying anything cold just because they zip and everything stays neat and organized. :)

    Did you like the Kale chips? Do the girls eat them? The Quinoa burger sounds interesting. I need to make Quinoa in general sometime and try it out.

    I happened upon Kale Chips in WOMAN’S DAY Magazine this month of all things… how did I not know about these delightful things years ago…. wish I’d known about your blog back in May! Now I feel so behind the times!! 😉

    LOVE kale chips and am so jealous that you can find pre-washed bagged kale!! Now I’m gonna keep my eyes peeled for some!
