Crack That Nut

Off and running first thing this morning. I’m so glad we’ve had a slight reprieve from the chilly mornings and I can run in shorts for a little while longer still.

I left my iPod at home today, wanting to just run and be completely present in the moment, focusing on what I was doing. My breathing and the sound of my feet hitting the pavement were the soundtrack for this morning’s run.

I had enough time this morning to go a bit longer and did 5.76 miles in about 47 minutes. My run definitely felt longer today without something to distract me, but it was welcome.

So who knows what time it is?

I don’t see young coconuts at the store regularly but when I do I always throw one in the cart! Especially when they are funded and sponsored by returned Sigg bottles.

There are many That’s What She Said opportunities in this post. How many do you count? There are so many I feel like my head might explode.

Zak came into the kitchen when he heard me pounding away on the knife with the rubber mallet. He suggested I take my operation outside and whack my nut on the large rocks at the bottom of the deck steps. My physics loving husband explained that the counter is absorbing most of the force of the blow and a lot of my energy was being wasted.

So that’s exactly what I did. I took my nut outside for a good whacking.

OK, not exactly.

I wonder what the hell my neighbors must think. I’m sure they see me running and riding and schlepping these kids all over creation. Don’t mind me, just gotta quick pound on this young coconut with a butcher knife and mallet at 7am on a Thursday morning. Carry on!

I am getting pretty good at the nut pounding though, I must say.

Cracked Nut Fresh Coconut Water

Zak came out to inspect my work to see how I was making out with his suggestion. He brought me a straw so I could suck the fresh juice straight out of the nut.

This is probably my 5th (or 6th??) young coconut and it has by far been the best one yet. The water had the perfect amount of coconut flavor. I’ve been asked about the flavor of fresh coconut water versus the packaged coconut water. I’ve only had one box of young coconut water and it did not impress me. Like most things, fresh is better than packaged and this has definitely been my experience with coconut water.

The meat from this coconut peeled easily off the inside, normally I’ve got to dig in hard and scrape it out with a spoon. It was so thick and meaty I couldn’t help but sink my teeth right into it.

After I slurped my nutty water and I put the meat in the fridge I went about my day with tasks around the house and helping get the man off on his way to work. When I felt hungry for breakfast I knew I had to incorporate that thick slab of nut meat.

I pulled out the mini chopper to give the coconut meat a thorough lashing.

I diced up a banana, stirred in my chopped meat, threw in some chia seeds, a handful of crushed walnuts and a good pour of hemp milk.

Holly girl asked the other day if Hemp milk is raw and I didn’t know the answer to that. I poked around on the Living Harvest website and can’t find anything that says it is so I’m assuming that it’s not. It’s also worth nothing that I pay HALF of what they are charging on the website for a box at Wegmans!

Now that I’ve completely exceeded my recommended daily allowance for both potassium and That’s What She Said jokes, I better sign off before this post gets any longer. Or harder.

    Hey thanks for stopping by my page!! I’m pretty sure you could do that with tofu, since you can do anything with tofu! I was thinking of doing it with cauliflower. Par boil for a few minutes, dip in egg whites, rolled into almond flour and then baked till done. My mom freaked the other night when I asked if I could sprinkle flax on the baked cauliflower. “Now that’s getting a bit out of hand!” LOL

    haha, another funny read with my coffee. have i ever mentioned i love your red countertops and i HATE the color red? but the shade you have going on there just works and i love them. weird sensation. you know i love TWSS references! and that bowl of meat/nana/chia looks so good, i will admit at first i thought it was cottage cheese and got really confused… but that was just because i scrolled down to get to the comment form before i read the whole post because i am a freak and i type bits of what i want to mention as i go along.     I’ve never had fresh coconut juice. Jonathan’s class cracked open coconuts and drank the juice to go along with their Chicka Chicka Boom Boom theme for the week. He loved it! :)

    In your slurping coconut juice pic, what are those plants growing in your backyard? It almost looks like pumpkin vines to me.

      That’s actually a volunteer (i.e., self sewn) decorative gourd plant from a gourde I bought last fall that was composted and apparently made it’s way to the outside of the compost to grow! We spotted it early in the summer and realized it was a squash plant of some sort, and we decided to let it go to see what it would produce. And OH BOY did it grow! It’s totally taken over the back yard and has easily produced 20+ gourds. I’m giving them away hand over fist.

      And doesn’t it figure that the acorn squash plant I planted in the garden produced one teeny tiny acorn squash? Zak said next year we are planting all squash plants near the compost!

      Ellen joked that one morning we would wake up to find the plant knocking on the deck window wanting to come in. It’s HUGE and is honestly the biggest squash plant I’ve ever seen in my life.

  • Whack! Great job whackin the coconuts! That looks so refreshing after a workout! I have to say I find coconut meat a little slimey and don’t really love it til I’d been dried (and sugared LOL) but the water is divine. And so good for you but you know that already. And your brekkie w/ nannas and chias looks awesome!

    I wanted to ask you about “Thrive”… I saw you mention it in another post, I was hoping to check it out at the library before plunking down the cash for it but my library doesn’t have it..so my question is -would you recommend it? Based on what I can see of it on Amazon, it looks good and worth the money, I have it on hold at the bookstore by my house.

    Were there every a plethora of TWSS in this entry. I just quit counting to be honest! :)

    Also, I love running without a soundtrack. I’m able to focus more on my body and how it feels, which makes me a better runner I think.

    I’ve never tried young coconut, and wouldnt know where to go look for one. where do i go!? help a lost individual!

      Lizzy, I find them in the produce section at Wegmans with the other exotic fruits (like mango, pineapple, etc) and they are almost always with the mature (brown hairy beast) coconuts. They don’t always have them though, and I seem to find them more regularly at health food stores, but they are of course pricier there too. Keep your eyes peeled and you just might spot one!
