Why I’m trying to get this young coconut open, you see.

This is my second young coconut. Getting these things open is no small task. Considering the ones in my bra aren’t so young anymore I was inspired to try, try again. And a special thanks to Linda for additional inspiration and her fabulous idea to use a mallet instead of trying to cut this thing open with an axe and keeping my hand behind my back to ensure “I don’t lose it”, as Natalia Rose would say.

It’s a small miracle I didn’t wake the children pounding on this thing this morning.

But it worked! I knew I was getting close when got splashed in the eye with coconut water!

Success!

No, not something I have to drop off at the lab today for analysis, just fresh coconut water.

And the scraped out coconut meat that I’ll figure out what I’m going to do with later.

I downed my nutty water and then downed some dog. OK that didn’t come out exactly like I’d imagined. Just trying to find a nice transition to say that I went from drinking coconut water to 40 minutes of Gentle Hatha yoga.

Coconut, yoga, what’s next?

Breakfast cookie. What else? Well, I suppose green juice would have been a possibility.

This one was as good as my cookie on Monday, using less liquid is key!

Today’s I made a pot of herbal coffee. I found this Teeccino in the cupboard yesterday when I was scrounging for lentils. I bought this a long time ago and decided to make some today.

And now I remember why this is still in the cupboard.

Not As Good

It’s not that bad, but it’s not coffee either. I keep picking up my cup thinking it’s coffee and then I remember.

It’s sort like picking up a cup you think has orange juice in it but you don’t realize until after you took a sip that it’s really milk.

Now I’ve got to go make a pot of real coffee because this stuff is such a tease.

  • I had a breakfast cookie this morning too…and I think you’re right, that less liquid is key. I put a *little* too much in to the mix last night. Still yummy though, of course. ๐Ÿ˜€

    I haven’t been brave enough to buy my own coconut and crack it open yet…but I’m feeling motivated after reading this post. ๐Ÿ˜€

    that is so cool with the young coconut– is there such thing as an “old coconut’- this may sound like a joke but im actually dead serious hahah…. i tried something other than overnight oats again today- look at me! im gonna have to go back to overnight oats tomorrow though- maybe back to a breakfast cookie after that haha

    I’ve never seen a baby coconut before only the furry brown ones that look like they have a cute little face on them. :)

    I’m sure you’ll find something to do with the coconut insides. Can’t wait to hear!

    we crack one of those “puppies” about once a week…but I make hubby do it… he KNOWS I am a klutz with knife when cutting soft things, let alone a Coconut.

    I eat the insides “frozen” too lazy to actually make anything with it…LAZYs not the right word….IMPATEINT! there, better.

    well, it’s official we eat identical foods chica.

    except my breakfast cookie is dinner/dessert. and most days I get a bite and the men eat the rest!

    Yeah…. I can’t part with my coffee either…… Call me an addict but you know what…. if this is the worst addiction I have I think I’m doing quite well!! Also, I can’t wait to see what happens with the coconut meat! Yummy!

    I have got to get me a young one!! (coconut that is). Have yet to try it. Thanks for that cause when I do get one I now know how to open it. Only thing is is that I dont have a mallet :(. A hammer will suffice. Question: Do you count cals?

    OMG-oodness! What a riot you are girlfriend!!

    Yay….ya got it! Try making a Coconut smoothie out of the water and pureed meat….with a touch of sweetner of choice…pretty darn good. But I think I like to drink the water all by itself the best.

    Did you ever come down from your coconut water “BUZZ”? LOL!! Euphoric all the way….just sayin ๐Ÿ˜€
