I’m starting to really wonder about my cat and his will to live.
With no work out yesterday I was more than ready to get out run this morning. An easy 4 in 33 minutes.
I came home to put together lunch for Zak and ate strawberries with reckless abandon for Breakfast Part I.
A short while later I was ready to make up for yesterday’s less than stellar bowl of cookie batter oats. Things had definitely improved today.
1/2 c of steel cut oats mixed with 3 chopped dates, coconut, flax seed in 1/2 c almond milk overnight. Slopped into the blender and I SLOWLY added a splash or two of almond milk when the blender needed more liquid to work with.
Today’s was the perfect consistency. I found myself scraping the blender and licking the spatula clean much like I would like to lick the bowl of cookie batter, but without the salmonella paranoia. If my blender opening was a little bigger I can’t say I wouldn’t have risked getting “batter” on my eyebrows and my hair tangled around the blender blade.
With a spoonful of almond butter and a couple more pieces of date, I felt like I had seen today’s bowl somewhere before…
Think think think…

I just love steel cut oats…love the texture and the nuttier flavor they give off.
Hey, what type of dates are the best? Never would have thought of soaking the flax seeds in almond milk overnight. I usually just grind them and dump them in…what happens to them when you soak them? I know, full of questions I am…haha
