For lunch today I made one of my favorite salads.

Red leaf lettuce, spinach, 3/4 of a large Gala apple, chopped (I ate the other 1/4 while I prepped) some tomato and basil feta cheese, cubes of extra firm tofu and a few cashews.

Everything into a large bowl, then I added 2 Tbsp of this amazing Miso dressing.

Lettuce Go On a Date

You know how you get a new car, and then suddenly it seems like everyone everywhere is driving the same car, when in the past you’d barely even noticed said car?

Well that seems to be the case for making snacks with dates too.

It all started innocently enough with Elizabeth’s post on date bars. They looked amazing and on my next trip to the grocery store I bought a pound of medjool dates.

My motivation to get healthy began in 2008 when I started to notice how achy and old my body was feeling at the ripe old age of 29.  Getting healthy wasn’t just about losing weight and feeling better about my appearance, (although I won’t deny that vanity certainly played a role) I realized I wanted to feel good again, to feel like myself again.  To feel young again!

One egg, a (large) splash of vanilla soy milk, a bit of vanilla extract and some cinnamon, scrambled together.

Two slices of whole wheat bread, soak each piece in egg mixture for about a minute, or until bread is good and saturated.

No Eating Before Bed

Yes, we’ve heard this before.  But it feels different this time because my new source of inspiration Jillian Michaels actually explained this concept in greater detail, why it’s important and how it makes a difference in her latest book, Master Your Metabolism.  And now I’m all over this idea like lice in a room full of pre-schoolers.

Waking up hungry, I ransacked the fridge for a bowl of pre-run watermelon.

A bit of foreshadowing for more PINK yet to come this morning perhaps?

Watermelon partially digested, I laced up my sneakers and hit the pavement for 32 minutes to run 4.18 miles with Jillian.

Upon my return as I approached the house, I could hear Maxine crying from the street (windows open). I ran up the stairs and snagged her from the bedroom. We came downstairs to do some yoga to stretch and cool down.

For lunch today I threw together some refried beans quesadillas.  Spicy refried beans smeared into a flat out wrap, sliced tomatoes, corn and a little bit of white cheddar cheese. I also made some kale chips to use up the last of my bag of kale and for a little green on the side.

June One

For the first day of June, it is a little chilly! 47 degrees at 6:30 called for a long sleeved shirt and capri tights for my 5.88 mile morning run. When I got home the girls were still asleep, which allowed Zak and I to have some uninterrupted conversation before he was on his way to work.
