Breakfast Paradise

No work out for me this morning, not an official one anyway. Today is a rest day but I still couldn’t pass up the opportunity to take a short little leisurely ride on my bike to the corner grocery store. It’s such a perfectly sunny, cool morning! The banana hammock is empty and I need my bananas for breakfast.

I enjoyed coconut in my breakfast cookie so much yesterday I decided to add it in to today’s breakfast too.

Last night I put together 1/2 c+ rolled oats, 1/4 c Stonyfield Farm LF vanilla yogurt, 1/2 c unsweetened vanilla hemp milk and a tablespoon of coconut. I also took a couple chunks of organic mango from the freezer and put them in the fridge to thaw over night.

Home with my loot, I topped my overnight oats with a tablespoon of ground flax, diced up mango, 1/2 a banana and some crushed pecans. The mango, coconut and pecans made me feel like I was eating breakfast on a tropical island! Plus coffee with a generous splash of organic 1% milk.

Oats of the tropics?  Something like that.
